%20%20I%20was%20heavily%20pregnant%20with%20my%20middle%20son%20at%20the%20time,%20and%20Leona%20was%20one%20of%20the%20first%20people%20I%20met%20along%20with%20a%20great%20gal%20named%20Debbie,%20who%20just%20happened%20to%20live%20down%20the%20street%20from%20me.%20%20I%20will%20never%20forget%20that%20night%20because%20Debbie%20said%20if%20I%20went%20into%20labor%20she%20would%20watch%20my%20other%20three%20children%20until%20my%20sister%20arrived%20to%20take%20over.%20%20Little%20did%20any%20of%20us%20know%20but%20the%20very%20next%20night%20I%20went%20into%20labor%20and%20the%20rest%20is%20history.%3C/p%3E%3Cp%3EThe%20three%20of%20us%20became%20fast%20friends%20during%20our%20stay%20in%20London%20and%20shared%20many%20a%20meal%20and%20recipe%20with%20each%20other.%20%20Leona%20was%20a%20fair%20bit%20older%20than%20myself%20and%20so%20she%20was%20a%20tiny%20bit%20like%20a%20mother%20to%20me.%20%20She%20was%20and%20is%20a%20great%20cook.%20%20She's%20in%20her%20late%2070's%20now%20and%20still%20cooking!%3C/p%3E%3Cp%3EThis%20was%20her%20cake%20recipe%20and%20its%20a%20wonderful%20recipe.%20The%20whole%20thing%20starts%20off%20as%20a%20crumb%20mixture%20you%20make,%20then%20it%20gets%20divided%20and%20a%20portion%20of%20it%20has%20eggs,%20etc%20beaten%20into%20it%20to%20form%20the%20base,%20and%20the%20remainder%20gets%20sprinkled%20on%20top%20before%20baking.%3C/p%3E%3Cp%3EThe%20end%20result%20is%20a%20beautiful%20cake%20with%20a%20buttery%20moist%20base%20and%20a%20moreish%20cinnamon%20flavoured%20crumble%20topping,%20that%20goes%20really%20well%20with%20cream,%20ice%20cream%20or%20whipped%20cream.%20%20It's%20great%20served%20warm%20as%20a%20dessert,%20or%20cold%20with%20a%20nice%20warm%20drink%20or%20glass%20of%20milk.%3C/p%3E%3Cp%3EI%20never%20make%20this%20cake%20without%20thinking%20about%20Leona%20and%20remembering%20all%20the%20fun%20times%20we%20had%20together.%20%20%20%20Its%20been%20a%20favourite%20in%20my%20family%20for%20over%2035%20years%20now%20and%20I%20think%20it%20will%20become%20a%20favourite%20in%20yours%20as%20well!%3C/p%3E%3Cp%3E*Leona's%20Crumb%20Cake*%3C/p%3E%3Cp%3EMakes%20one%209%20inch%20square%20cake%3C/p%3E%3Cp%3EDelicious%20cake%20that%20is%20fabulous%20as%20a%20dessert,%20served%20warm%20with%20some%20ice%20cream%20on%20the%20side,%20or%20as%20a%20great%20brunchtime%20coffee%20cake!%3C/p%3E%3Cp%3Eand%20set%20aside%20for%20later.%3C/p%3E%3Cp%3EBeat%20the%20eg%20lightly%20and%20add%20to%20the%3C/p%3E%3Cp%3Eremaining%20crumbs.%20%20Dissolve%20the%20soda%20in%20the%20milk%20and%20then%20add%20along%20with%3C/p%3E%3Cp%3Ethe%20salt,%20and%20vanilla.%20%20Beat%20the%20mixture%20only%20until%20smooth.%20%20Spread%3C/p%3E%3Cp%3Einto%20the%20prepared%20baking%20pan.%20%20Sprinkle%20the%20reserved%20crumbs%20evenly%20over%3C/p%3E%3Cp%3Etop.%20%20Sprinkle%20lightly%20with%20cinnamon.%3C/p%3E%3Cp%3EBake%20for%2040%20to%2045%20minutes,%20or%20until%20a%20toothpick%20inserted%20in%20the%20centre%20comes%20out%20clean.%3C/p%3E%3Cp%3ECool%20in%20pan%20on%20a%20rack.%20%20Cut%20into%20squares%20to%20serve.%3C/p%3E%3Cp%3EThis%20is%20the%20perfect%20cake%20to%20enjoy%20for%20a%20delicious%20brunch%20with%20your%20family%20at%20the%20weekend.%20%20%20Bon%20Appetit!%3C/p%3E){kind=link}
