- Developed for diabetics or possibly if on low-fat, low-cholesterol diet or possibly if you just like to eat health.Dissolve gelatin in boiling water, stirring well. Stir in cold water. Refrigerate till consistency of unbeaten egg whites. Fold mayonnaise into gelatin. Add in cottage cheese and pineapple, stirring well. Pour into 6 cup mold coated with cooking spray, refrigerate till hard, unmold onto lettuce leaves if you like.
