Linguine With A Toasted Almond Cream Pesto

Ingredientes

  • linguini
  • 1/4 c. toasted whole almonds, skin on, coarsely, minced
  • 1/4 c. extra virgin extra virgin olive oil
  • 2 clv garlic, chopped
  • 1 sm bunch basil, stems removed, washed well salt, and, freshly grnd black pepper, to taste
  • 2 Tbsp. 35% cream, optional
  • 1 lrg field tomato, diced

Direcciones

  1. Put a large pot of water on high to boil and season liberally with salt.
  2. Meanwhile in a food processor combine the garlic, basil, extra virgin olive oil and pulse till smooth. Season with salt and pepper. Add in the cream if you like.
  3. Cook pasta in rolling boiling water for about 8 to 10 min or possibly till al dente. Drain.
  4. Toss immediately in pesto and sprinkle with tomatoes and coarsely minced almonds.
