Ingredientes

  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 1/2 med yellow onion finely minced
  • 2 med garlic cloves thinly sliced
  • 1/4 c. shredded carrot
  • 1 tsp dry oregano
  • 1 can peeled whole tomatoes - (28 ounce)
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly-grnd black pepper
  • 4 x warm Italian sausage, 1" thk (abt 4 ounce ea)
  • 1/4 c. -finely minced fresh basil
  • 1 lb linguine
  • 1 c. toasted breadcrumbs (optional)

Direcciones

  1. To make the sauce: In a medium saucepan, heat the extra virgin olive oil over medium heat. Add in the onion and garlic. Cook for 5 min, stirring occasionally. Add in the carrot and oregano. Cook for 5 more min, stirring occasionally.
  2. In a large bowl crush the tomatoes in your hands and add in them, along with all the juices, to the saucepan. Season with the salt and pepper. Simmer for 10 min.
  3. Grill the sausages over Direct Medium heat till no longer pink in the center, 6 to 10 min, turning once halfway through grilling time. Remove the sausages from the grill. Slice them thinly crosswise and then roughly chop them. Add in the sausages and basil to the saucepan. Stir. Keep hot.
  4. In a large pot of boiling salted water, cook the linguine till barely tender. Drain the linguine and return it to the pot. Add in the sauce. Stir to combine. Cover the pot for 1 minute to allow the pasta to absorb some sauce. Sprinkle toasted breadcrumbs on top, if you like. Serve hot.
