- To make the sauce: In a medium saucepan, heat the extra virgin olive oil over medium heat. Add in the onion and garlic. Cook for 5 min, stirring occasionally. Add in the carrot and oregano. Cook for 5 more min, stirring occasionally.
- In a large bowl crush the tomatoes in your hands and add in them, along with all the juices, to the saucepan. Season with the salt and pepper. Simmer for 10 min.
- Grill the sausages over Direct Medium heat till no longer pink in the center, 6 to 10 min, turning once halfway through grilling time. Remove the sausages from the grill. Slice them thinly crosswise and then roughly chop them. Add in the sausages and basil to the saucepan. Stir. Keep hot.
- In a large pot of boiling salted water, cook the linguine till barely tender. Drain the linguine and return it to the pot. Add in the sauce. Stir to combine. Cover the pot for 1 minute to allow the pasta to absorb some sauce. Sprinkle toasted breadcrumbs on top, if you like. Serve hot.
- This recipe yields 4 to 6 servings.
- Wine Recommendation: This dish calls for a "big" red wine like Zinfandel.
- Beer Recommendation: A pale ale with a little sweetness hits the spot.
- Comments: This pasta will soothe you right down to your soul. Grilled sausages are the key to the tomato sauce's hearty character. If you prefer a milder dish, use sweet (not warm) Italian sausages.
