  • 2 pkt Unflavored gelatin
  • 2 Tbsp. Cool water
  • 2 1/4 c. Lowfat evaporated lowfat milk undiluted

  1. & Divided16 ounces Can solid pack pumpkin 6 Tbsp. Dark brown sugar - packed or possibly sweetener equivalen1 tsp. Pumpkin pie spice1 tsp. Vanilla extract
  2. In medium bowl, sprinkle gelatin over cool water to soften; set aside. In small saucepan, heat 1 c. of the evaporated lowfat milk to just boiling. Slowly stir warm lowfat milk into gelatin; stir till gelatin is dissolved. Fold in remaining evaporated lowfat milk, the pumpkin, brown sugar, pumpkin pie spice, and vanilla; set aside. Spray 10-inch glass pie plate with non-stick vegetable coating. Pour mix into pie plate; refrigeratetill hard.
