- 2 Tbsp. Cool water
- 2 1/4 c. Lowfat evaporated lowfat milk undiluted

- In medium bowl, sprinkle gelatin over cool water to soften; set aside. In small saucepan, heat 1 c. of the evaporated lowfat milk to just boiling. Slowly stir warm lowfat milk into gelatin; stir till gelatin is dissolved. Fold in remaining evaporated lowfat milk, the pumpkin, brown sugar, pumpkin pie spice, and vanilla; set aside. Spray 10-inch glass pie plate with non-stick vegetable coating. Pour mix into pie plate; refrigeratetill hard.
