Delish-io! I used yellow squash also. I cut some baguette bread in thin slices and topped them with the cooked Loaded Zucchini Bites ~ made them into perfect open-face mini-sandwiches!
My friend tasted the batch I made and next day decided to try them herself though she didn't have access to the recipe and wasn't positive about the procedure. She browned the zucchini slices patiently and slowly in a skillet, til they were just lightly browned on both sides, then arranged them on a non-stick aluminum foil-lined baking sheet. Next she added a light layer of all the toppings and broiled them for a minute or so. They were delicious even with these radical changes! See what you started, Claudia!
