Receta Lobster Newburg Barbarini

- Set lobster meat to simmer in a small double boiler with 1 c. cream. simmer the lobster for 1/2 hour. Meanwhile heat in a saucepan 4 Tbsp. butter. Stir in 2 tsp. flour. Stir in warm lowfat milk sufficient to make a smooth thick sauce. Cook it for 3 min, transfer lobster and sauce to a large double boiler. Season it with white pepper, paprika, and salt, to taste. Let the whole newburg simmer about 15 min then add in 2 Tbsp. of sherry 5 min before sending it to the table. Add in another dab of butter, stir it well. Then add in about 1 Tbsp. cool water just before serving.
