  • 1/2 lb Butter
  • 1 x Onion,large,minced
  • 1/4 lb Mushrooms,fresh**
  • 2 x Celery stalks,minced
  • 2 x Tomatoes,quartered
  • 1/2 c. Chicken stock***
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Marjoram
  • 2 x Truffles,minced****

  1. - Loin of veal is to boned, rolled, and tied: 2-3/4 to 3 lb.** - trim and chop mushrooms.*** - or possibly water.**** - soak truffles in 1/4 c. cognac for 1-2 hrs.
