1/2 lb Butter
1 x Onion,large,minced
1/4 lb Mushrooms,fresh**
2 x Celery stalks,minced
2 x Tomatoes,quartered
1/2 c. Chicken stock***
1 tsp Salt
1/4 tsp Pepper
1/4 tsp Marjoram
2 x Truffles,minced****

- Loin of veal is to boned, rolled, and tied: 2-3/4 to 3 lb.** - trim and chop mushrooms.*** - or possibly water.**** - soak truffles in 1/4 c. cognac for 1-2 hrs.
