Receta Louisiana French Treasure (Dirty Rice)

Ingredientes
- 3 c. uncooked rice
- 3 tbsp. oil
- 3 tbsp. flour
- 3 white onions, minced
- 3-4 stalks celery, minced
- 1 lg. green pepper, seeded and minced
- 12 ounce. chicken livers, trimmed, steamed and minced
- 1 pound sausage with sage
- Red and black pepper and salt to taste
- 1/2 c. green onion, include tops, minced fine
- 1/2 c. parsley, minced fine
Direcciones
- Cook rice according to directions. Heat oil in heavy skillet and add in flour (cook stirring constantly till tan color). This is Rue. Add in onions, celery and pepper; cook till onions are transparent.
- In another skillet cook sausage (breaking apart till fine). Add in liver and other ingredients, blend well. Place in flat baking dish and cover and bake 15 min. Add in green onions and parsley, toss and bake another 15 min. (May add in warm sauce if want this hotter.)
