Ingredientes

  • 3 lb fragrant apples, such as Galas or possibly McIntoshes (4 to 6 apples)
  • 1 x cinnamon stick or possibly 1 tsp. grnd cinnamon
  • 2 x inch piece of vanilla bean, cut in half lengthwise
  • 2 x strips lemon zest
  • 1 1/2 Tbsp. fresh lemon juice, or possibly to taste
  • 1/4 c. sugar, or possibly to taste
  • 2 Tbsp. dry white wine
  • 2 1/4 c. water, or possibly as needed

Direcciones

  1. Wash apples and cut each in half. Remove stems and cores with a melon baller, but leave skins intact. Place apples in a large, heavy pot with cinnamon, vanilla, lemon zest and juice, sugar, wine and water. Bring to a boil.
  2. Reduce heat and simmer apples, covered, till soft, 20 to 30 min. Remove pan from heat and let cold slightly. Throw away cinnamon stick and vanilla bean.
  3. Puree apples and pan juices in a blender or possibly food processor; the former will give you a silky smooth puree, the latter a chunkier applesauce. Serve applesauce with latkes or possibly blintzes. Or possibly eat it out of a bowl with a spoon.
