"Madison County" Spaghetti Sauce

Ingredientes

  • 1/4 c. Vegetable oil
  • 1 med Onion, minced
  • 1/4 c. Green bell pepper, minced
  • 2 x Cloves garlic, chopped
  • 3 can (12-ounce) tomato paste
  • 6 x -(up to)
  • 7 can Water
  • 1/4 tsp Dry oregano
  • 1 tsp Dry basil
  • 1 sm Bay leaf
  • 1 Tbsp. Sugar
  • 1 1/2 tsp Salt
  • 1/4 tsp Pepper

Direcciones

  1. Heat oil in a large pot over mediun heat. Saute/fry the onion, green pepper, and garlic till soft, about 5 min. Add in the tomato paste and water, and stir till smooth. Add in oregano, basil, bay leaf, sugar, salt and pepper.
  2. Simmer, uncovered for 1-2 hrs. Serve over spaghetti.
  3. Variation: For meat sauce, brown 1 lb. Italina sausage and 1 lb. grnd beef, and add in with the spices.
