- 1 teaspoon cumin seeds
- ½ teaspoon red pepper flakes
- Seeds of 3 cardamom pods (about ¼ teaspoon)
- 1 (1-inch) piece cinnamon stick
- ½ teaspoon ground turmeric
- 1½ tablespoons menthe (fenugreek leaves)
- 1 charcoal briquette (I recommend using a natural hardwood charcoal)
- 3 tablespoons ghee
- ½ cup small-diced shallot
- 1½ teaspoons fine sea salt
- 1 tablespoon minced garlic
- 1 tablespoon grated fresh ginger
- 14 ounces maitake mushrooms, main stem trimmed, caps torn into bite-size pieces
- 2 medium red tomatoes, cored

- 2 teaspoons honey
- ½ cup Greek yogurt
- ½ cup heavy cream
- 1 medium Yukon Gold potato, medium diced (about 1½ cups)
