%20is%20based%20on%20a%20sweet-ish%20sauce%20made%20with%20jaggery%20(aka%20gur/vellam)%20and%20green/raw%20mangoes%20with%20a%20hint%20of%20green%20chillis%20%E2%80%93%20needless%20to%20say,%20it%20brings%20together%20a%20medley%20of%20tastes%20in%20one%20delectable%20dish.%20i%20love%20mangai%20pachadi%20and%20used%20to%20pester%20my%20mum%20to%20start%20buying%20raw%20mangoes%20the%20moment%20they%20hit%20the%20market%20stalls%20to%20make%20pachadi.%20%20normal%20days%20apart,%20mangai%20pachadi%20is%20a%20must-have%20on%20the%20lunch%20menu%20in%20many%20homes%20on%20the%20occassion%20of%20the%20tamil%20new%20year,%20which%20falls%20on%20april%2014.%20when%20made%20specially%20for%20the%20new%20year,%20neem%20flowers%20are%20added%20to%20it.%20the%20reason%20this%20dish%20is%20made%20on%20the%20new%20year%E2%80%99s%20day%20is%20for%20a%20special%20one:%20with%20a%20combination%20of%20sweet,%20sour,%20bitter%20and%20hot%20tastes,%20the%20dish%20is%20meant%20to%20symbolise%20the%20different%20types%20of%20experiences%20that%20life%20keeps%20sending%20our%20way.%20and%20just%20as%20we%20enjoy%20the%20fusion%20of%20tastes%20in%20the%20pachadi,%20we%20are%20to%20welcome%20all%20the%20experiences%20-%20with%20a%20smile%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMaking%20the%20Mangai%20Pachadi:%3C/p%3E%3Cp%3ECut%20the%20mango%20into%20thin%20square%20slices%20and%20boil%20it%20in%20plain%20water%20until%20the%20pieces%20become%20soft.%20Keep%20aside%20to%20cool.%20Cut%20up%20the%20jaggery%20into%20little%20cubes,%20add%20just%20enough%20water%20to%20immerse%20the%20cubes%20and%20bring%20the%20mixture%20to%20a%20boil%20%E2%80%93%20take%20it%20off%20the%20heat%20once%20it%20starts%20to%20boil.%20Then%20strain%20the%20liquid%20through%20a%20tea%20filter%20to%20remove%20all%20impurities.%20Temper%20the%20mustard%20seeds%20in%20about%20a%20bit%20of%20ghee,%20add%20the%20neem%20flowers%20and%20green%20chilli%20pieces%20and%20saute%20it.%20Put%20the%20jaggery-water%20mixture%20on%20low%20to%20medium%20heat,%20add%20all%20the%20ingredients%20including%20the%20boiled%20mango%20pieces%20and%20bring%20to%20a%20boil.%20When%20the%20sauce%20starts%20to%20thicken,%20take%20it%20off%20the%20heat.%20Cool%20slightly%20and%20serve.%3C/p%3E%3Cp%3EPosted%20in%20cooking%3C/p%3E){kind=link}
