-%3C/p%3E%3Cp%3ESo%20how%20did%20I%20make%20this%20meal?%20This%20meal%20that%20my%20husband%20is%20taking%20for%20lunch%20tomorrow%20(it's%20a%20win%20when%20that%20happens)...%3C/p%3E%3Cp%3EOven%20at%20350%3C/p%3E%3Cp%3ECook%20the%20manicotti%20noodles%20in%20boiling%20water%20for%20about%207%20minutes-take%20them%20out-they%20should%20still%20be%20VERY%20al%20dente%20(they'll%20continue%20cooking%20in%20the%20oven)%20pour%20cold%20water%20over%20them%20to%20cool%20them%20off.%3C/p%3E%3Cp%3EFilling:%3C/p%3E%3Cp%3ESaute%20mushrooms%20and%20garlic%20in%20a%20tablespoon%20or%20so%20of%20olive%20oil%20for%20about%205%20minutes-set%20aside%20to%20cool.%3C/p%3E%3Cp%3EAt%20this%20point%20I%20pulled%20out%20the%20food%20processor-%3C/p%3E%3Cp%3EI%20ran%20the%20cottage%20cheese%20and%20eggs%20through%20then%20put%20them%20in%20a%20big%20bowl-%3C/p%3E%3Cp%3EI%20added%20the%20%22wrung%20out%22%20spinach%20to%20that%20as%20well-%3C/p%3E%3Cp%3EI%20didn't%20dice%20my%20mushrooms%20before%20saute,%20so%20I%20put%20those%20and%20the%20roasted%20red%20peppers%20for%20just%20a%20couple%20pulses%20in%20the%20food%20pro%20and%20added%20that%20to%20the%20cheese%20mix.%3C/p%3E%3Cp%3EOh%20yeah,%20you'll%20need%20a%20jar%20of%20spaghetti%20sauce%20too...%3C/p%3E%3Cp%3EI%20put%20about%201/2%20cup%20of%20the%20spaghetti%20sauce%20in%20the%20bottom%20of%20my%20pan,%20then%20with%20a%20spoon%20(and%20a%20mess)%20I%20filled%20the%20cooled%20manicotti%20noodles%20with%20the%20cheese%20mix-%20(in%20the%20box%20there%20were%2014%20noodles...I%20only%20made%207-one%20tray-it%20was%20just%20enough%20for%20the%20two%20of%20us%20for%20dinner%20and%20for%20his%20lunch%20tomorrow)%3C/p%3E%3Cp%3ETop%20it%20with%20the%20rest%20of%20the%20jar%20of%20spaghetti%20sauce-%3C/p%3E%3Cp%3EI%20dusted%20it%20with%20about%20a%20tablespoon%20of%20parmesean%20cheese%20and%20then%20about%201/3%20cup%20shredded%20mozzerella.%3C/p%3E%3Cp%3ECover%20with%20foil%20and%20bake%20for%2030%20minutes.%3C/p%3E%3Cp%3EI%20had%20filling%20leftover%20that%20I'm%20planning%20on%20doing%20a%20round%20two%20recipe%20with%20later%20this%20week.%3C/p%3E%3Cp%3EI%20really%20liked%20this%20dinner,%20and%20so%20did%20the%20husband.%3C/p%3E%3Cp%3EYou%20don't%20miss%20the%20meat%20at%20all!%20I%20guess%20between%20%22meat%22%20flavored%20spaghetti%20sauce%20and%20the%20meaty%20bella%20mushrooms%20it%20makes%20it.%20The%20roasted%20reds%20give%20it%20just%20enough%20color%20and%20flavor%20that%20I%20would%20definately%20keep%20them%20in%20this%20recipe.%20How%20cool%20do%20I%20feel%20eating%20a%20vegetarian%20dinner%20too%20huh?%3C/p%3E){kind=link}
