MAPLE MASHED SWEET POTATOES

Ingredientes

  • 4 lbs. sweet potatoes (5-6 potatoes)
  • 6 slices bacon
  • 1/2 cup half and half
  • 1/3 cup maple syrup
  • 1/3 cup butter
  • 1 1/4 tsp. salt
  • 1/4 tsp. pepper

Direcciones

  1. In pot combine sweet potatoes and water. Boil
  2. Cook bacon until crisp. Crumble. In microwave combine half and half and maple syrup. Microwave on High for 1-2 minutes.
  3. Mash sweet potatoes with butter until smooth. Gradually mash in maple syrup.
  4. Stir in salt and pepper.
  5. Reserve 1/4 cup bacon. Stir remaining bacon into potatoes.
  6. Transfer to dish. Top with bacon.
