Ingredientes

  • 400 ml water
  • 350 gm castor sugar
  • 3 x pandan leaves--knot
  • 125 gm green bean flour (lek tau hoon or possibly lok tau fun)
  • 200 ml water
  • 1 lt water Tinge of yellow colouring Tinge of green colouring

Direcciones

  1. Method:To make the syrup: Boil water with pandan leaves. Add in sugar to dissolve. Set aside.
  2. Combine green bean flour with water and mix well. Leave aside for 10 min. Strain to remove impurities.
  3. Boil litre of water. Add in boiled syrup and simmer till water comes to a gentle boil. Pour in green bean flour mix and stir briskly till mix turns thick and is crystal clear.
  4. Place two ladles of cooked mix into two separate bowls. Add in different colours to each portion. Leave the remaining mix plain.
  5. Pour two small ladles of plain mix into a wet tin (22cm x 15cm). Add in a coloured portion followed by a ladle of plain mix. Fold in another coloured portion and top up with the rest of the mix.
  6. Use a chopstick to swirl the mix to create a marble effect. Leave aside to set. Refrigeratewell in the refrigerator then cut into diamond shapes.
  7. Note: You can opt to use only one colouring for the kuih.
