%20and%20considering%20his%20weight%20is%20already%20a%20concern%20it%20was%20very%20stressful.%20We%20noticed%20a%20bunch%20of%20teeth%20popped%20in%20this%20week,%20including%201%20random%20tooth%20in%20the%20back,%20so%20I%20am%20guessing%20that%20was%20the%20source%20of%20the%20strike.%20He's%20still%20not%20fully%20back%20in%20the%20swing%20of%20eating,%20but%20we'll%20get%20there!%20However,%20while%20Landon%20may%20not%20be%20eating,%20John%20and%20I%20sure%20did%20this%20month.%20I%20remade%20a%20lot%20of%20our%20favorites%20and%20I%20have%20to%20say%20it%20was%20a%20tasty%20month!%3C/p%3E%3Cp%3EI%20started%20off%20the%20month%20making%20a%20double%20batch%20of%20these%20waffle%20sticks.%20Landon%20ate%20one%20for%20breakfast%20almost%20every%20day%20this%20month%20(prior%20to%20the%20hunger%20strike%20of%20course).%20He%20eats%20them%20with%20apple%20butter%20spread%20on%20top%20since%20I%20don't%20want%20to%20introduce%20him%20to%20syrup%20just%20yet.%20The%20combo%20is%20surprisingly%20good!%20These%20freeze%20great-%20they%20are%20still%20holding%20up%20perfectly%20in%20my%20freezer.%3C/p%3E%3Cp%3EThis%20pesto%20chicken%20and%20alfredo%20casserole%20brings%20back%20great%20memories%20for%20me.%20I%20remember%20making%20it%20for%20the%20first%20time%20in%20preparation%20for%20Landon's%20birth.%20I%20also%20remember%20being%20a%20walking%20zombie%20with%20a%20newborn%20and%20pulling%20this%20from%20the%20freezer,%20so%20happy%20it%20was%20there.%20It%20was%20just%20as%20good%20as%20I%20remember%20this%20time%20around.%20We%20love%20this%20meal.%3C/p%3E%3Cp%3EI%20dug%20deep%20into%20my%20forgotten%20favorites%20on%20this%20blog%20to%20find%20this%20recipe%20for%20saucy%20baked%20chicken.%20This%20was%20SO%20SO%20good.%20I%20forgot%20how%20much%20my%20family%20loved%20it%20the%20first%20time%20around%20and%20it%20was%20even%20better%20this%20time%20around.%20This%20time%20the%20chicken%20roasted%20up%20so%20wonderfully,%20it%20was%20perfect.%20I%20didn't%20pre-bake%20it%2010%20minutes%20without%20sauce%20because%20the%20chicken%20was%20thin,%20but%20it%20was%20still%20cooked%20perfectly.%20I%20even%20managed%20to%20shovel%20a%20few%20bites%20into%20Landon!%3C/p%3E%3Cp%3EWe%20love%20pizza,%20as%20I'm%20sure%20you%20know,%20but%20this%20time%20around%20we%20had%20one%20of%20my%20favorites-%20eggplant%20ricotta%20pizza.%20This%20time%20I%20put%20the%20ricotta%20over%20the%20eggplant%20then%20sliced%20it%20into%20thin%20strips%20and%20sprinkled%20the%20strips%20over%20the%20pizza.%20I%20liked%20it%20better%20than%20how%20I%20did%20it%20last%20time%20where%20I%20put%20the%20whole%20eggplant%20cutlets%20on%20because%20this%20way%20it%20was%20more%20evenly%20dispersed.%3C/p%3E%3Cp%3EThis%20month%20I%20also%20had%20an%20order%20of%20sugar%20cookies%20with%20royal%20icing%20to%20make%20for%20a%20bridal%20shower.%20Ironically%20it%20was%20the%20same%20design%20as%20the%20one%20in%20the%20picture,%20but%20my%20skills%20are%20better%20and%20the%20cookies%20looked%20much%20neater%20than%20this%20first%20attempt%20you%20see%20above.%20I%20also%20decided%20I'm%20probably%20out%20of%20the%20cookie%20favor%20making%20business-%20it's%20too%20hard%20with%20Landon!%20I've%20been%20averaging%20an%20order%20every%20month%20or%20so%20for%20some%20time%20now%20but%20with%20the%20baby%20it's%20difficult.%20I'll%20miss%20it,%20but%20I%20think%20I%20need%20a%20break.%3C/p%3E%3Cp%3EWhen%20I%20decided%20to%20launch%20my%20Toddler%20Tuesdays%20series%20I%20wanted%20to%20go%20with%20mac%20and%20cheese%20muffins,%20and%20I%20knew%20the%20perfect%20recipe-%20lighter%20baked%20macaroni%20and%20cheese.%20One%20thing%20I've%20learned%20over%20the%20years%20is%20I%20am%20not%20a%20fan%20of%20heavy%20macaroni%20and%20cheese.%20This%20recipe%20is%20just%20perfect-%20it%20uses%20part%20chicken%20broth%20and%20part%20milk%20for%20the%20base%20which%20is%20just%20how%20I%20like%20it.%3C/p%3E%3Cp%3ESo%20I%20mentioned%20Landon's%20hunger%20strike.%20When%20it%20started%20I%20assumed%20he%20just%20was%20sick%20of%20his%20waffles,%20so%20I%20made%20a%20batch%20of%20these%20mini%20maple%20pancake%20muffins%20but%20mixed%20in%20blueberries%20instead%20of%20chocolate.%20He%20is%20definitely%20a%20fan%20of%20bread%20products%20so%20I%20figured%20these%20would%20be%20a%20hit.%20He%20STILL%20hasn't%20even%20tried%20them%20due%20to%20the%20strike,%20but%20they're%20in%20the%20freezer,%20waiting%20for%20my%20good%20eater%20to%20return.%20He%20did%20nibble%20a%20couple%20bites%20of%20one%20and%20didn't%20spit%20it%20out,%20so%20I%20claim%20victory.%3C/p%3E%3Cp%3ECrockpot%20ropa%20vieja%20is%20my%20new%20go-to%20recipe%20whenever%20I%20see%20london%20broil%20is%20on%20sale.%20This%20past%20week%20they%20were%20really%20marked%20down%20at%20the%20food%20store%20so%20I%20grabbed%20one%20and%20made%20it.%20This%20time%20I%20served%20it%20over%20noodles%20and%20it%20was%20even%20better%20because%20the%20sauce%20was%20perfect%20with%20the%20egg%20noodles.%20
