- 1/4 cup kosher salt
- 2 tablespoons brown sugar
- 1/2 cup limeade (or tequila…totally not the same thing, I know)
- 3 tablespoons orange zest
- 1/2 cup orange juice
- 3 tablespoons lime zest
- 1 tablespoon whole peppercorns
- 1 1/2 pounds boneless skinless chicken thighs, trimmed of excess fat*
- Extra-virgin olive oil
- Freshly ground black pepper
- 3 limes, halved
- 1-2 lemons, halved
- 1 orange, halved
- You can also use 1 1/2-2 pounds bone-in chicken breasts (with skin), peeled and deveined shrimp, or pork loin or tenderloin
