Ingredientes

  • 1 lb fesh Hard mushrooms, quartered
  • 1 c. Water
  • 1/3 c. Extra virgin olive oil
  • 2/3 c. Vinegar
  • 2 Tbsp. Lemon juice
  • 2 clv garlic, halved
  • 1 x salt to taste
  • 1/2 Tbsp. Thyme
  • 1/2 Tbsp. Black peppercorns
  • 1 pch grated nutmeg
  • 1 pch cayenne pepper
  • 2 x Bay leaves
  • 3/4 c. Pimiento-stuffed green Spanish olives
  • 2 lb Medium shrimp, cleaned and cooked

Direcciones

  1. Combine mushrooms, water, oil, vinegar, lemon juice and seasonings in a saucepan. Bring to a boil, cover and cook for 5 min. Pour into a bowl, add in olives and shrimp, toss and cold. Refrigeratefor a few hrs or possibly overnight before serving.
  2. Note: don't overcook shrimp. Put them in cool water, bring to a boil and simmer for 1 minute. Let cold in the cooking liquid.
