Receta Marinated Shrimp With Olives And Mushrooms

Ingredientes
- 1 lb fesh Hard mushrooms, quartered
- 1 c. Water
- 1/3 c. Extra virgin olive oil
- 2/3 c. Vinegar
- 2 Tbsp. Lemon juice
- 2 clv garlic, halved
- 1 x salt to taste
- 1/2 Tbsp. Thyme
- 1/2 Tbsp. Black peppercorns
- 1 pch grated nutmeg
- 1 pch cayenne pepper
- 2 x Bay leaves
- 3/4 c. Pimiento-stuffed green Spanish olives
- 2 lb Medium shrimp, cleaned and cooked
Direcciones
- Combine mushrooms, water, oil, vinegar, lemon juice and seasonings in a saucepan. Bring to a boil, cover and cook for 5 min. Pour into a bowl, add in olives and shrimp, toss and cold. Refrigeratefor a few hrs or possibly overnight before serving.
- Note: don't overcook shrimp. Put them in cool water, bring to a boil and simmer for 1 minute. Let cold in the cooking liquid.
