Marinated Skirt Steak Fajitas

Ingredientes

  • Juice of one lime
  • 2 Tbsp. Vegetable oil
  • 2 x Garlic cloves
  • 1/2 tsp Grnd cumin
  • 1/2 x Jalapeno pepper seeded
  • 1/4 c. Cilantro leaves
  • 1 lb Trimmed skirt steak Salt to taste Freshly-grnd black pepper to taste
  • 12 x Flour tortillas - (7 " dia) warmed Salsa Lowfat sour cream Sliced red onions Lime wedges

Direcciones

  1. In a food processor or possibly blender combine the lime juice, oil, garlic, cumin, jalapeno and cilantro leaves and process till pureed. Alternatively, combine the lime juice and oil in a bowl. Finely chop together the garlic, cumin, jalapeno and cilantro and whisk into the juice and oil mix. Pour the mix over the steak and allow to marinate for 30 min.
  2. Preheat charcoal grill or possibly stovetop grill pan. Season the steak with salt and pepper. Grill the steak for 2 to 3 min per side or possibly till cooked to desired degree of doneness. Transfer the steak to a cutting surface and allow to stand for 5 to 8 min. Cut steak across the grain into thin slices or possibly chop into 1/2-inch pcs. Serve immediately with hot tortillas and accompaniments.
