Mario's Cream Of Asparagus Soup

Ingredientes

  • 3/4 c. butter
  • 1 sm spanish onion, finely minced
  • 2 x cloves garlic, finely minced
  • 3 Tbsp. freshly chopped parsley
  • 1 lb fresh asparagus, excluding woody st, alks, minced fin
  • 1/4 c. all-purpose flour
  • 2 c. chicken stock
  • 2 c. whipping cream
  • 1 x salt and pepper to taste

Direcciones

  1. Heat butter over medium heat, then saute/fry onion till transluscent. Add in garlic, parsley and asparagus. Continue to saute/fry till asparagus is tender. Add in flour and stir till blended. Add in chicken stock and simmer till slightly thickened. Add in cream and stor over low heat.
  2. Add in salt and pepper to taste.
  3. Pour mix into blender and puree till very smooth. Transfer to soup bowls and serve.
