Receta Mario's Cream Of Asparagus Soup

Ingredientes
- 3/4 c. butter
- 1 sm spanish onion, finely minced
- 2 x cloves garlic, finely minced
- 3 Tbsp. freshly chopped parsley
- 1 lb fresh asparagus, excluding woody st, alks, minced fin
- 1/4 c. all-purpose flour
- 2 c. chicken stock
- 2 c. whipping cream
- 1 x salt and pepper to taste
Direcciones
- Heat butter over medium heat, then saute/fry onion till transluscent. Add in garlic, parsley and asparagus. Continue to saute/fry till asparagus is tender. Add in flour and stir till blended. Add in chicken stock and simmer till slightly thickened. Add in cream and stor over low heat.
- Add in salt and pepper to taste.
- Pour mix into blender and puree till very smooth. Transfer to soup bowls and serve.
