Ingredientes

  • 1/4 c. Extra virgin olive oil
  • 4 x Marlin steaks, (3/4 inch All purpose flour
  • 1 x Onion, finely minced
  • 1 1/3 c. Pitted Spanish green olives, quartered lengthwise (about)
  • 1/2 c. Golden brown raisins
  • 1/4 c. Liquid removed capers
  • 1/4 c. White wine vinegar
  • 1/4 c. Chopped fresh mint

Direcciones

  1. Heat oil in heavy large skillet over high heat. Season fish with salt and pepper. Coat fish in flour and add in to skillet. Cook till brown, about 2 min per side. Transfer fish to plate.
  2. Add in onion to same skillet, reduce heat to medium and cook till golden brown, about 4 min. Add in olives, raisins and capers. Reduce heat to low; cook 2 min, stirring frequently. Return fish to skillet. Spoon sauteed ingredients over. Add in vinegar and half of mint; cook till fish is cooked through, about 2 min. Season with salt and pepper. Transfer fish to plates, spooning sauteed ingredients over. Sprinkle with remaining mint.
