Receta Marlin Stemperata

Ingredientes
- 1/4 c. Extra virgin olive oil
- 4 x Marlin steaks, (3/4 inch All purpose flour
- 1 x Onion, finely minced
- 1 1/3 c. Pitted Spanish green olives, quartered lengthwise (about)
- 1/2 c. Golden brown raisins
- 1/4 c. Liquid removed capers
- 1/4 c. White wine vinegar
- 1/4 c. Chopped fresh mint
Direcciones
- Heat oil in heavy large skillet over high heat. Season fish with salt and pepper. Coat fish in flour and add in to skillet. Cook till brown, about 2 min per side. Transfer fish to plate.
- Add in onion to same skillet, reduce heat to medium and cook till golden brown, about 4 min. Add in olives, raisins and capers. Reduce heat to low; cook 2 min, stirring frequently. Return fish to skillet. Spoon sauteed ingredients over. Add in vinegar and half of mint; cook till fish is cooked through, about 2 min. Season with salt and pepper. Transfer fish to plates, spooning sauteed ingredients over. Sprinkle with remaining mint.
