.%20:)%20She%20was%20a%20fabulous%20baker%20and%20baked%20very%20often,%20not%20only%20because%20she%20loved%20it%20but%20also%20because%20she%20wanted%20my%20father%20and%20I%20to%20have%20something%20tasty%20in%20our%20lunch%20boxes.%3C/p%3E%3Cp%3ELicking%20the%20bowl%20is%20a%20sport%20I%20still%20practice%20%E2%80%93%20in%20fact,%20I%E2%80%99ll%20gladly%20try%20most%20doughs%20and%20batters%20before%20actually%20baking%20them.%20What%20I%20did%20not%20expect%20was%20that%20this%20habit%20would%20actually%20save%20me%20a%20great%20amount%20of%20stress%20after%20a%20baking%20session:%20Sunday%20morning%20and%20I%20set%20out%20to%20make%20muffins.%20I%20chose%20Delia%20Smith%E2%80%99s%20marmalade%20muffins%20because%20I%20love%20anything%20marmalade%20and%20wanted%20to%20give%20that%20beautiful%20book%20a%20try.%20The%20batter%20was%20ready%20in%20no%20time%20and%20soon%20the%20muffins%20were%20in%20the%20oven.%20While%20they%20baked,%20I%20started%20making%20the%20bed%20and%20all%20of%20a%20sudden%20it%20hit%20me:%20I%20hadn%E2%80%99t%20added%20any%20sugar%20to%20the%20batter!!!%20O_O%20I%20ran%20back%20to%20the%20kitchen,%20grabbed%20the%20recipe%20and%20read%20it%20again%20%E2%80%93%20no,%20there%20was%20no%20sugar%20in%20it.%20It%20wasn%E2%80%99t%20my%20mistake.%20Then%20I%20remembered%20how%20good%20the%20batter%20tasted%20and%20felt%20instantly%20relieved:%20the%20marmalade%20alone%20would%20be%20enough%20to%20sweeten%20the%20muffins.%20Phew.%3C/p%3E%3Cp%3EThese%20muffins%20are%20not%20too%20sweet%20%E2%80%93%20obviously%20:)%20%E2%80%93%20and%20the%20marmalade%20topping%20make%20them%20even%20tastier.%20I%E2%80%99m%20a%20sucker%20for%20marmalade%20but%20I%20believe%20these%20could%20work%20with%20other%20preserves,%20too%20%E2%80%93%20apricot%20comes%20to%20mind,%20or%20maybe%20raspberry%20paired%20with%20lemon%20zest.%3C/p%3E%3Cp%3EMarmalade%20muffins%3C/p%3E%3Cp%3Eslightly%20adapted%20from%20the%20master%20Delia%20Smith%20(mine%20was%20bought%20here)%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20200%C2%B0C/400%C2%B0F.%20Line%20a%201/3-cup%20capacity%20muffin%20pan%20with%209%20paper%20liners%20and%20fill%20the%20remaining%20cavities%20halfway%20up%20with%20water.%3C/p%3E%3Cp%3EPlace%20the%20marmalade%20in%20a%20small%20bowl%20and%20give%20it%20a%20good%20stir%20to%20loosen%20it%20up.%20In%20a%20large%20bowl,%20sift%20together%20the%20flour,%20baking%20powder%20and%20salt.%20Zest%20and%20juice%20the%20orange,%20then%20measure%20the%20juice%20%E2%80%93%20you%E2%80%99ll%20need%20%C2%BD%20cup%20(120ml);%20if%20you%20don%E2%80%99t%20have%20enough%20juice,%20make%20it%20up%20with%20some%20milk.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20zest%20and%20juice%20(and%20milk,%20if%20using),%20almond%20meal,%20egg,%20vanilla%20and%20melted%20butter.%20Pour%20these%20ingredients%20into%20the%20flour%20mixture%20and%20lightly%20whisk%20with%20a%20fork%20%E2%80%93%20do%20not%20overmix%20or%20your%20muffins%20will%20be%20tough.%20Fold%20in%20the%20marmalade.%20Divide%20the%20batter%20between%20the%20muffin%20liners%20and%20bake%20for%2018-20%20minutes%20or%20until%20risen%20and%20golden%20and%20a%20skewer%20inserted%20in%20the%20center%20comes%20out%20clean.%20Cool%20in%20the%20pan%20over%20a%20wire%20rack%20for%205%20minutes,%20then%20carefully%20unmold%20onto%20the%20rack%20and%20cool.%20You%20can%20serve%20these%20muffins%20warm%20or%20at%20room%20temperature%20%E2%80%93%20before%20serving,%20spread%20the%20extra%20marmalade%20on%20top%20of%20each%20muffin.%3C/p%3E%3Cp%3EMakes%209%3C/p%3E){kind=link}
