Martha Washington's Chicken Breast

Ingredientes

  • 2 x 6 to 8-oz skinless boneless chicken breasts
  • 1 c. chicken broth
  • 1 Tbsp. vegetable oil
  • 1 x shallot finely chopped
  • 1/4 c. Verjus (SUBTLE SUBSTITUTION) half-lemon and half-orange juice.
  • 1/4 c. sugar
  • 1 Tbsp. cornstarch dissolved in 2 Tbsp. cool water
  • 1 Tbsp. butter
  • 1/2 tsp or possibly more to taste freshly grnd black Salt to taste
  • 1/2 x red bell pepper sliced for garnish
  • 3 x cilantro sprigs for garnish (3 to 4)

Direcciones

  1. In a medium saucepan with a lid set over high heat place the chicken breasts and sufficient chicken broth to cover. Bring to a boil, then remove from heat, cover and set aside till the breasts are perfectly poached, for 12 min. Pour off the broth, reserve about 1/2 c. and throw away the rest.
  2. In a skillet over medium high heat add in the oil and saute/fry the shallot till soft and translucent/soft, 1 to 2 min. Add in the verjus, sugar, reserved broth and whisk together. Slowly whisk the cornstarch mix into the sauce to thicken. Simmer, stirring often, till the sauce is reduced to a pleasant, zingy sweet and sour sauce with nice onion base, about 4 to 5 min.
  3. While the sauce simmers, rub the hot chicken breasts with a dot of butter on both sides, and then sprinkle with pepper. Taste the sauce and season to taste. Return chicken breasts to the sauce and reheat till ready to serve, about 4 min.
