%20%20This%20could%20not%20have%20been%20a%20more%20timely%20challenge.%20%20I%20am%20totally%20in%20soup%20mode.%20%20It's%20an%20Autumnal%20favorite%20of%20mine,%20in%20all%20it's%20permutations.%20%20OK,%20disclaimer%20time....%20%20(you%20knew%20it%20was%20coming)%20%20All%20opinions%20stated%20here%20are%20my%20own%20and%20no%20funds%20have%20been%20exchanged%20between%20Marx%20Food's%20and%20myself.....%20%20%20blah%20blah%20blah%20blah....%20OK%20enough%20of%20that...%3C/p%3E%3Cp%3EThe%20selection%20from%20Marx%20Foods%20included%20Porcini%20(Bolete),%20Matsutake%20(Pine%20Mushroom)%20and%20Black%20Trumpets%20(Horn%20of%20Plenty,%20Black%20Chanterelles,%20Poor%20Man's%20Truffle,%20or%20Trumpet%20of%20the%20Dead).%20%20Not%20your%20run%20of%20the%20mill%20mushrooms,%20that's%20for%20sure.%3C/p%3E%3Cp%3EI%20am%20also%20positive%20that,%20if%20you%20have%20been%20following%20this%20blog%20for%20any%20length%20of%20time,%20the%20litany%20of%20AKA's%20for%20the%20Black%20Trumpet%20was%20a%20dead%20giveaway%20as%20to%20which%20one%20I%20chose%20to%20grace%20my%20soup%20recipe.%3C/p%3E%3Cp%3EConsidering%20the%20flavor%20of%20Black%20Trumpets,%20being%20buttery,%20nutty%20and%20slightly%20smoky,%20I%20felt%20they%20would%20be%20the%20perfect%20with%20Oysters.%20%20Of%20course,%20I%20have%20been%20craving%20oyster%20stew%20for%20the%20last%20couple%20weeks%20anyway,%20so%20this%20just%20made%20it%20that%20much%20better.%20%20Though%20Black%20Trumpets%20season%20is%20now,%20being%20late%20summer%20and%20fall,%20they%20are%20one%20of%20the%20best%20dried%20mushrooms%20available.%20%20They%20hold%20their%20flavor%20VERY%20well,%20so%20fresh%20or%20dried,%20it%20really%20makes%20no%20difference.%3C/p%3E%3Cp%3EOyster%20stew%20is%20a%20little%20tricky.%20%20The%20whole%20point%20is%20to%20keep%20it%20as%20simple%20as%20possible%20and%20NOT%20over%20do%20it%20with%20added%20%22stuff%22.%20%20It's%20suppose%20to%20taste%20like%20a%20%22creamy%20ocean%22%20when%20you%20are%20done.%20%20It's%20definitely%20a%20case%20of%20%22Less%20is%20More%22.%20%20That%20includes%20%22less%22%20Flour%20(this%20isn't%20a%20thick%20chowder)%20and%20%22less%22%20Oysters.%20%20It%20should%20not%20be%20completely%20stuffed%20with%20meat.%20%20Figure%20about%206-8%20oysters%20per%20person.%20%20That's%20all.%20%20It's%20really%20all%20about%20the%20flavor%20of%20the%20delicate%20sweet%20&%20buttery%20milk%20broth.%20%20mmmmmmmmm%3C/p%3E%3Cp%3EThis%20%22less%20is%20more%22%20philosophy%20is%20part%20of%20the%20reason%20I%20use%20Leeks%20in%20my%20soup;%20a%20lot%20of%20soups%20actually,%20but%20in%20oyster%20stew%20in%20particular.%20%20Leeks%20are%20a%20member%20of%20the%20onion%20family,%20an%20easy%20going%20member%20of%20the%20onion%20family.%20%20Like%20the%20friend%20who%20helps%20you%20in%20the%20kitchen%20without%20taking%20over%20the%20party.%20%20Their%20unassuming%20nature%20makes%20them%20a%20perfect%20fit%20for%20Oysters,%20lending%20flavor%20without%20stomping%20all%20over%20their%20delicate%20flavor.%20%20As%20an%20added%20bonus,%20Leeks%20are%20divine%20with%20mushrooms%20in%20general.%3C/p%3E%3Cp%3EWhile%20the%20mushrooms%20are%20soaking,%20shuck%20the%20oysters,%20reserving%20the%20liquid,%20then%20filter%20the%20liquid%20through%20a%20fine%20mesh%20strainer,%20into%20a%202%20cup%20measuring%20receptacle,%20to%20ensure%20there%20are%20no%20small%20bits%20of%20shell;%20set%20both%20the%20oysters%20and%20the%20liquid%20aside%20for%20now.%3C/p%3E%3Cp%3EAfter%20you%20have%20shucked%20the%20oysters,%20the%20mushrooms%20should%20be%20thoroughly%20hydrated,%20so%20filter%20the%20mushroom%20juice%20through%20a%20fine%20mesh%20strainer%20into%20the%20same%202%20cup%20measuring%20devise%20as%20the%20Oyster%20juice.%20(I%20left%20my%20Trumpets%20whole,%20but%20you%20can%20chop%20them%20up%20a%20little,%20if%20you%20like)%3C/p%3E%3Cp%3EYou%20should%20have%20about%201%20cup%20of%20Oyster/Mushroom%20Juices.%3C/p%3E%3Cp%3EAdd%20enough%20Heavy%20Cream%20to%20make%202%20cups,%20then%20set%20aside.%3C/p%3E%3Cp%3EBegin%20melting%203%20TB%20unsalted%20Butter%20in%20a%202%20quart%20pot%20set%20over%20Medium-Low%20flame.%20(your%20goin'%20for%20a%20%22sweat%22,%20not%20a%20saute)%3C/p%3E%3Cp%3EWhen%20melted,%20add%20the%20Leeks%20and%20the%20Garlic%20and%20sweat%20until%20they%20begin%20to%20soften%20slightly.%3C/p%3E%3Cp%3EAdd%20the%20Black%20Trumpets%20and%20continue%20cooking%20for%20about%204-5%20minutes%20longer.%3C/p%3E%3Cp%3EAdd%20the%20Flour%20and%20stir%20to%20thoroughly%20coat%20the%20Black%20Trumpets%20and%20Leeks,%20then%20continue%20cooking%20and%20stirring%20until%20the%20flour%20begins%20to%20smell%20nutty.%3C/p%3E%3Cp%3EPour%20in%20the%20Trumpet/Oyster/Heavy%20Cream%20mixture,%20stirring%20constantly%20to%20ensure%20the%20Flour%20is%20dissolved.%3C/p%3E%3Cp%3EAdd%20the%20Whole%20Milk%20as%20well,%20stirring%20again%20to%20ensure%20everything%20is%20well%20mixed,%20then%20let%20everything%20just%20sort%20of%20hang%20out%20over%20Medium-Low%20flame%20while%20you%20deal%20with%20the%20Oysters.%3C/p%3E%3Cp%3EIn%20an%208%20inch%20skillet,%20melt%20the%20remaining%201%20TB%20Unsalted%20Butter%20over%20Medium%20flame.%3C/p%3E%3Cp%3EOnce%20melted,%20add%20the%20Oysters.%3C/p%3E%3Cp%3ECook%20until%20they%20begin%20to%20give%20off%20liquid%20and%20they%20sort%20of%20%22plump%20up%22%20and%20the%20edges%20just%20begin%20to%20%22curl%22.%20(overcooked%20Oysters%20are%20disgusting%20leathery%20things%20that%20are%20just%20NOT%20tasty)%3C/p%3E%3Cp%3ERemove%20the%20Oysters%20from%20the%20skillet%20with%20a%20slotted%20spoon%20and%20immerse%20then%20into%20the%20warm%20Soup.%3C/p%3E%3Cp%3EGive%20the%20soup%20a%20good%20slug%20of%20white%20wine....%20%20And,%20if%20you%20want,%20you%20can%20filter%20the%20liquid%20from%20the%20skillet%20through%20a%20fine%20mesh%20strainer%20and%20into%20the%20soup%20as%20well.%3C/p%3E%3Cp%3ESeason%20the%20soup%20with%20Salt%20and%20Pepper.%3C/p%3E%3Cp%3ECover%20the%20the%20soup%20and%20reduce%20the%20flame%20to%20LOW....%3C/p%3E%3Cp%3EWay%20low...%20%20As%20low%20as%20you%20can%20possibly%20go.%20You%20really%20only%20need%20to%20keep%20it%20warm%20for%20about%2010%20minutes%20to%20give%20all%20the%20flavors%20chance%20to%20get%20to%20know%20one%20another%20and%20meld%20into%20an%20elixir%20of%20unfettered%20deliciousness%20that%20makes%20angels%20weep.%20%20(I'm%20just%20sayin')%3C/p%3E%3Cp%3EServe%20with%20a%20sprinkle%20of%20freshly%20chopped%20Italian%20Parsley.%20(and%20oysters%20crackers,%20if%20you%20like)%3C/p%3E%3Cp%3EMMMMMMMMMMMMMMM%20%20The%20Black%20Trumpets%20were%20a%20perfect%20addition%20to%20my%20Oyster%20Stew.%3C/p%3E%3Cp%3ETasting%20of%20rich%20butter%20and%20nuts%20with%20an%20elusive%20spice%20quality%20that%20augmented%20the%20flavor%20of%20the%20oysters%20instead%20of%20fighting%20with%20it.%20%20I%20really%20didn't%20get%20any%20smokiness,%20but%20I%20think%20I%20understand%20why%20Black%20Trumpets%20are%20often%20referred%20to%20as%20the%20%22Poor%20Man's%20Truffle%22.%20%20There%20is%20something%20exotically%20intoxicating%20about%20the%20aroma.%3C/p%3E%3Cp%3EI%20will%20have%20to%20make%20my%20Oyster%20stew%20this%20way%20from%20now%20on.%20%20I'm%20completely%20hooked.%20(no%20pun%20intended....)%3C/p%3E%3Cp%3EMangia!!%3C/p%3E){kind=link}
