Receta Mary Frann's Shrimp In Mayonnaise

- In a bowl, combine shrimp and peppers. In food processor, combine capers, tarragon, garlic, and lemon peel. Puree till thick. Stir in mayonnaise.
- Pour mayonnaise mix over shrimp and peppers. Toss till mixed. Refrigerate1 to 2 hrs.
- To serve, top each muffin half with lettuce, then some shrimp mix.
- Garnish with endive, sliced black olives and minced scallions if you like.
