- Wash and soak rice for 15-20 min.
- Heat oil in a heavy large skillet.
- Add in cashews, peanuts, fry until light brown.
- Add in green chilli, curry leaves, cumin seeds, allow to splutter.
- Add in ginger, garlic, stir. Add in onion, stir.
- Add in all remaining vegetables, raisins, masalas, rice, stir 2 min.
- Add in 4 c. water, masalas, lemon juice, salt.
- Bring to a boil, cover, simmer until done.
- Stir occasionally, add in more water if required.
- All water should evaporate when the grain is cooked.
- Serve warm with kadhi or possibly curd raitha.
