%20but%20I%20have%20never%20taken%20the%20time%20to%20make%20it%20from%20scratch.%20%20Now%20I%20remember%20why!%20%20If%20you%20live%20in%20Texas,%20my%20friends,%20it%E2%80%99s%20an%20all-day%20process%20during%20the%20month%20of%20September!%20%20We%E2%80%99re%20still%20struggling%20to%20keep%20our%20homes%20cool,%20so%20the%20conditions%20are%20not%20exactly%20conducive%20to%20a%20process%20that%20requires%20keeping%20the%20butter%20solid%20cold%20while%20you%20perform%20a%20series%20of%20turns%20which%20creates%20the%20flakiness%20of%20the%20dough.%20%20Roll,%20fold,%20turn,%20chill%20and%20wait;%20roll,%20fold,%20turn,%20chill%20and%20wait%20again;%20roll%E2%80%A6%20and%20so%20it%20went%20all%20day%20long.%20%20The%20key%20to%20successful%20puff%20pastry%20is%20to%20keep%20the%20butter%20from%20playing%20hookie%20on%20your%20counter%20instead%20of%20being%20obediently%20enveloped%20in%20the%20dough%20while%20you%E2%80%99re%20rolling%20it.%20%20A%20cool%20marble%20countertop%20cool%20to%20look%20at%20and%20cool%20to%20the%20touch%20would%20be%20sooo%20perfect%20for%20this%20project%E2%80%A6note%20to%20self%20%E2%80%93%20%20make%20sure%20you%20get%20at%20least%20one%20marble%20countertop%20for%20making%20pastries%20when%20you%20redo%20the%20kitchen!%3C/p%3E%3Cp%3EI%E2%80%99m%20not%20a%20master%20yet%20when%20it%20comes%20to%20making%20puff%20pastry,%20but%20it%20was%20good%20enough%20to%20produce%20the%20vols-au-vent%20(literally%20%E2%80%9Cwindblown%E2%80%9D%20for%20its%20airiness),%20pictured%20above.%20%20Vols-au-vent%20are%20typically%20served%20hot%20and%20are%20filled%20with%20a%20creamy%20savory%20filling.%20%20I%20filled%20them%20with%20a%20chilled%20fresh%20Crab%20Salad%20%E2%80%93%20%20who%20wants%20to%20heat%20up%20the%20stove%20in%2090%20degree%20weather?%3C/p%3E%3Cp%3EThe%20September%202009%20Daring%20Bakers'%20challenge%20was%20hosted%20by%20Steph%20of%20A%20Whisk%20and%20a%20Spoon.%20She%20chose%20the%20French%20treat,%20Vols-au-Vent%20based%20on%20the%20Puff%20Pastry%20recipe%20by%20Michel%20Richard%20from%20the%20cookbook%20Baking%20With%20Julia%20by%20Dorie%20Greenspan.%20%20Thanks%20Steph%20for%20organizing%20the%20challenge%20and%20thanks%20to%20Lis%20and%20Ivonne%20for%20rocking%20the%20Daring%20Bakers%20every%20month%20with%20their%20cool%20challenges!%3C/p%3E%3Cp%3EVols%20Au%20Vent:%3C/p%3E%3Cp%3EMichel%20Richard%E2%80%99s%20Puff%20Pastry%20Dough%3C/p%3E%3Cp%3EFrom:%20Baking%20with%20Julia%20by%20Dorie%20Greenspan%3C/p%3E%3Cp%3EPlace%20the%20block%20of%20cold%20butter%20(the%20beurrage)%20in%20the%20middle%20of%20the%20dough%20(the%20d%C3%A9trempe)%20and%20fold%20the%20ears%20over%20the%20butter,%20stretching%20them%20as%20needed%20so%20that%20they%20overlap%20slightly%20and%20encase%20the%20butter%20completely.%20%20This%20dough/butter%20packet%20is%20called%20a%20paton%20and%20is%20rolled%20and%20folded%20repeatedly%20(turning).%3C/p%3E%3Cp%3EThen,%20keeping%20the%20work%20surface%20and%20the%20top%20of%20the%20dough%20well%20floured%20to%20prevent%20sticking,%20roll%20the%20dough%20into%20a%20rectangle%20that%20is%20three%20times%20as%20long%20as%20the%20square%20you%20started%20with,%20about%2024%22%20%E2%80%A6With%20this%20first%20roll,%20it%20is%20particularly%20important%20that%20the%20butter%20be%20rolled%20evenly%20along%20the%20length%20and%20width%20of%20the%20rectangle;%20check%20when%20you%20start%20rolling%20that%20the%20butter%20is%20moving%20along%20well,%20and%20roll%20a%20bit%20harder%20or%20more%20evenly,%20if%20necessary,%20to%20get%20a%20smooth,%20even%20dough-butter%20sandwich%20(use%20your%20arm-strength!).%3C/p%3E%3Cp%3EThe%20total%20number%20of%20turns%20needed%20is%20six%E2%80%A6However,%20no%20matter%20how%20you%20arrange%20your%20schedule,%20you%20should%20plan%20to%20chill%20the%20dough%20for%20at%20least%20an%20hour%20before%20cutting%20or%20shaping%20it.%3C/p%3E%3Cp%3EBake%20the%20shells%20until%20they%20have%20risen%20and%20begin%20to%20brown,%20about%2010-15%20minutes%20depending%20on%20their%20size.%3C/p%3E%3Cp%3ECrab%20Salad%20%20enough%20to%20fill%20about%2012%20vols-au-vent,%20but%20also%20good%20on%20a%20bed%20of%20lettuce!%3C/p%3E%3Cp%3EPick%20through%20the%20crabmeat%20to%20remove%20any%20scales.%3C/p%3E%3Cp%3EPlace%20red%20bell%20pepper,%20shallots%20or%20red%20onion,%20jalapenos,%20lime%20zest,%20lime%20juice,%20cilantro,%20vinegar%20and%20olive%20oil%20in%20a%20bowl.%20Whisk%20to%20blend.%20Add%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3EAdd%20crabmeat%20and%20gently%20mix%20it%20in.%20Top%20with%20scallions%20and%20serve%20with%20salad%20greens%20or%20in%20vols-au-vents.%3C/p%3E%3Cp%3EPrijatno!%3C/p%3E){kind=link}
