%20and%20cream%20used%20in%20classical%20French%20cuisine%20for%20quenelles%20(dumplings)%20or%20to%20make%20terrines.%3C/p%3E%3Cp%3EIt%20is%20a%20very%20simple%20and%20versatile%20preparation%20that%20can%20even%20produce%20elegant%20and%20delicate%20sausages;%20a%20perfect%20ingredient%20for%20a%20dinner%20party.%3C/p%3E%3Cp%3EWhat%20is%20Matcha%20Madness%20%20you%20ask%20me%20now?%20Matcha%20Madness%20is%20a%20recipe%20contest%20that%20Catty%20from%20The%20Catty%20Life%20started%20for%20the%20month%20of%20July.%20We%20were%20asked%20to%20produce%20something%20featuring%20matcha%20green%20tea%20to%20win%20a%20tin%20of%20Teapigs%E2%80%99%20matcha%20powder%20.%20If%20you%20want%20to%20know%20a%20bit%20more%20about%20matcha%20read%20my%20previous%20post.%3C/p%3E%3Cp%3EI%20decided%20to%20cook%20something%20savory%20and%20after%20fighting%20with%20something%20like%2010%20different%20dishes%20I%20chose%20three%20of%20them:%3C/p%3E%3Cp%3EIn%20this%20post%20I%20will%20share%20with%20you%20the%20recipe%20for%20the%20second%20dish:%3C/p%3E%3Cp%3ECod%20mousseline%20disk%20topped%20with%20a%20sprinkle%20of%20black%20nigella%20seeds%20and%20matcha%20foam%20served%20with%20a%20matcha%20flavored%20dashi%20broth%20and%20wakame%20seaweed%3C/p%3E%3Cp%3EIngredients%20(makes%203%20servings):%3C/p%3E%3Cp%3EFor%20the%20mousseline:%3C/p%3E%3Cp%3ENigella%20seeds.%3C/p%3E%3Cp%3EProcedure:%3C/p%3E%3Cp%3EWe%20start%20by%20doing%20the%20mousseline;%20the%20process%20is%20very%20easy%20and%20straightforward%20the%20important%20is%20to%20keep%20all%20the%20ingredients%20very%20cold%20at%20any%20time.%3C/p%3E%3Cp%3EIn%20a%20small%20mixer%20reduce%20the%20fish%20to%20a%20smooth%20paste,%20add%20then%20the%20egg%20white%20and%20blitz%20till%20combined.%20Slowly%20drizzle%20now%20the%20cream%20onto%20the%20mixture%20blending%20it%20in%20well.%20Season%20it%20with%20salt%20and%20pepper.%20To%20check%20the%20seasoning,%20have%20a%20small%20saucepan%20of%20barely%20simmering%20water%20at%20hand%20and%20drop%20a%20little%20teaspoon%20of%20the%20mixture%20in%20to%20cook%20for%205%20minutes%20or%20so%20and%20taste.%20Refrigerate%20the%20mousseline%20covered%20with%20plastic%20wrap%20for%20a%20couple%20of%20hours.%20If%20you%20want%20your%20mixture%20to%20be%20more%20delicate%20and%20refined,%20pass%20the%20fish%20paste%20through%20a%20fine%20mesh%20sieve%20before%20adding%20the%20cream.%3C/p%3E%3Cp%3EMake%20now%20the%20matcha%20flavored%20milk.%20In%20a%20small%20saucepan%20combine%20the%20milk,%20the%20matcha%20and%20the%20sugar;%20bring%20to%20a%20simmer%20and%20steep%20for%2010%20minutes%20out%20of%20the%20fire.%20To%20combine%20the%20fine%20matcha%20powder%20with%20the%20milk%20you%20could%20either%20create%20a%20paste%20with%20a%20little%20milk%20in%20small%20container%20and%20diluting%20it%20gradually%20so%20to%20eliminate%20all%20the%20lumps%20or%20slowly%20sifting%20the%20powder%20over%20the%20saucepan%20with%20the%20milk%20stirring%20from%20time%20to%20time.%3C/p%3E%3Cp%3EAfter%20the%20milk%20has%20been%20steeping,%20refrigerate%20well%20(for%20the%20same%20time%20as%20the%20mousseline%20or%20in%20a%20bowl%20containing%20ice%20water%20if%20on%20a%20hurry).%3C/p%3E%3Cp%3EWhen%20ready%20to%20assemble%20the%20dish,%20soak%20the%20wakame%20with%20cold%20water%20for%205minutes%20or%20so%20(do%20not%20use%20more%20than%206-7tbsp%20of%20water%20or%20the%20wakame%20flavor%20will%20be%20too%20diluted).%3C/p%3E%3Cp%3EIn%20a%20small%20skillet%20cook%20the%20thin%20carrot%20sticks%20and%20carvings%20with%20the%20sugar%20and%20a%20little%20water%20till%20the%20sugar%20will%20start%20bubbling,%20they%20will%20take%20only%20but%20few%20minutes%20to%20cook%20and%20candy%20slightly.%20Remove%20the%20carrot%20pieces%20over%20some%20baking%20paper%20to%20let%20the%20sugar%20harden.%3C/p%3E%3Cp%3ETo%20prepare%20the%20broth,%20combine%206tbsp%20of%20the%20wakame%20soaking%20water%20with%20some%20of%20the%20seaweed%20and%201%201/2%20tsp%20of%20sake;%20cover,%20bring%20to%20a%20simmer%20and%20steep%20for%2010%20minutes.%3C/p%3E%3Cp%3EPrepare%20the%20matcha%20foam%20by%20adding%20the%20cold%20whipping%20cream%20to%20the%20matcha%20milk%20and%20use%20a%20milk%20frother%20to%20create%20a%20thick%20foam.%3C/p%3E%3Cp%3ENow%20form%20the%20quenelles%20(in%20our%20case%20they%20will%20be%20disks);%20flour%20a%20non%20stick%20working%20surface%20and%20spread%20over%20it%20the%20cold%20mousseline.%20In%20the%20meantime%20bring%20some%20water%20to%20a%20boil%20in%20a%20kettle.%3C/p%3E%3Cp%3EFlouring%20your%20hands%20spread%20gently%20the%20mousseline%20mixture%20to%201/3inch%20of%20thickness.%20Using%20a%20cookie%20cutter%20or%20a%20medium%20size%20glass%20cut%20the%203%20disks%20out%20of%20the%20mousseline;%20if%20you%20are%20not%20able%20to%20cut%20all%20of%20them%20at%20once,%20gather%20the%20trimming%20and%20repeat%20the%20process.%3C/p%3E%3Cp%3EPut%20a%20saucepan%20wide%20enough%20to%20accommodate%20the%20three%20disks%20on%20a%20low%20fire,%20poor%20in%20the%20boiling%20water%20from%20the%20kettle%20and%20using%20a%20spatula%20lower%20one%20disk%20at%20a%20time%20into%20the%20hot%20water.%20Let%20cook%20for%2010%20minutes%20without%20letting%20the%20water%20coming%20back%20to%20a%20boil%20or%20the%20quenelles%20might%20burst.%3C/p%3E%3Cp%3ETo%20dress%20the%20plate,%20place%20some%20wakame%20on%20the%20center%20of%20each%20plate%20in%20a%20radial%20fashion%20so%20they%20will%20show%20under%20the%20quenelle%20like%20a%20crown.%20Bring%20the%20broth%20to%20a%20simmer%20and%20add%20the%20remaining%20sake.%3C/p%3E%3Cp%3EPlace%20one%20quenelle%20in%20each%20plate,%20sprinkle%20the%20top%20with%20few%20nigella%20seeds,%20poor%20in%20the%20warm%20broth%20and%20spoon%20some%20of%20the%20foam%20over%20each%20quenelle.%20Finish%20the%20plate%20with%20the%20candied%20carrots.%3C/p%3E){kind=link}
