Ingredientes

  • 1/2 c. pineapple juice
  • 1/2 c. lime juice
  • 1 Tbsp. salt
  • 1 Tbsp. minced fresh oregano
  • 6 x garlic cloves minced
  • 1 tsp freshly-grnd black pepper
  • 1/2 lb fresh mahi mahi, tuna or possibly cod
  • 2 x flour or possibly corn tortillas - (6" dia) hot
  • 1 Tbsp. minced cilantro
  • 2 Tbsp. minced red onion Pineapple Tomato Salsa (see recipe)

Direcciones

  1. Combine pineapple juice, lime juice, salt, oregano, garlic and pepper. Mix well. Pour this mix over the mahi mahi and let marinate for 24 hrs.
  2. Remove the fish from the marinade and cut into 1/4-inch cubes. Grill or possibly saute/fry the fish. Place the fish in the tortillas and garnish with cilantro, onion and Pineapple Tomato Salsa.
  3. This recipe yields 2 servings.
