%20I%20have%20been%20lucky%20enough%20that%20I've%20never%20come%20across%20any%20gristle%20or%20bone%20in%20it.%20Whew!%3C/p%3E%3Cp%3EOur%20local%20butcher%20only%20stocks%20free%20range%20hereford%20beef,%20and%20it's%20very,%20very%20good.%20This%20is%20one%20of%20my%20favourite%20ways%20to%20cook%20it,%20amongst%20many.%20Todd%20really%20likes%20these%20with%20a%20nice%20big%20pile%20of%20mash,%20but%20sometimes%20he%20gets%20chips.%20He%20doesn't%20mind,%20as%20long%20as%20it's%20potato%20in%20one%20way,%20shape%20or%20form.%20He%20is%20truly%20a%20meat%20and%20potatoes%20kind%20of%20a%20guy.%3C/p%3E%3Cp%3E*Meatballs%20and%20Gravy*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EMy%20Todd%20is%20a%20real%20meat%20and%20potatoes%20man.%20He%20loves%20these%20tasty%20meatballs%20that%20I%20make,%20similar%20to%20Swedish%20ones,%20but%20not,%20if%20you%20know%20what%20I%20mean.%3C/p%3E%3Cp%3EFor%20the%20meatballs:%3C/p%3E%3Cp%3ECombine%20all%20the%20meatball%20ingredients%20and%20mix%20together%20well.%20Shape%20into%20walnut%20sized%20balls,%20wetting%20hands%20as%20needed.%20Heat%20some%20oil%20in%20a%20large%20skillet.%20Add%20the%20meatballs%20and%20brown%20them%20all%20over.%20Remove%20with%20a%20slotted%20spoon%20to%20a%20paper%20towel%20lined%20plate%20and%20keep%20warm%20until%20they%20are%20all%20done.%20Reserve%202%20TBS%20of%20the%20pan%20drippings,%20disposing%20of%20the%20rest.%20Heat%20the%20pan%20drippings%20in%20the%20same%20pan,%20Whisk%20in%20the%20flour%20for%20the%20gravy.%20Cook%20and%20stir%20one%20minute,%20then%20slowly%20stir%20in%20the%20stock,%20milk,%20lemon%20zest,%20thyme%20and%20creamed%20horseradish.%20Cook%20and%20stir%20until%20the%20gravy%20is%20smooth%20and%20thickens.%20Taste%20and%20adjust%20seasoning%20adding%20salt%20and%20or%20pepper%20if%20needed.%3C/p%3E%3Cp%3Epre-heat%20the%20oven%20to%20180*C/350*F.%20Place%20the%20meatballs%20into%20a%20shallow%20casserole%20dish.%20Pour%20the%20gravy%20over%20top.%20Bake,%20uncovered,%20for%2020%20to%2025%20minutes,%20until%20bubbling%20and%20browned.%20Serve%20hot%20and%20spooned%20over%20mashed%20potatoes,%20buttered%20noodles%20or%20steamed%20white%20rice.%20Delicious!%3C/p%3E){kind=link}
