.%20Then%20there%20was%20assembling%20Avon%20orders%20to%20get%20out,%20then%20bring%20my%20brother%20to%20pick%20up%20his%20car,%20then%20lunch%20at%20the%20parents,%20then%20grocery%20shopping,%20then%20pick%20up%20medicine,%20come%20home%20cook%20dinner%20and%20learn%20a%20new%20song%20for%20zumba%20class...%20then%20teach%20said%20zumba%20class...%20yup%20I'm%20wiped%20out!!!%20So%20this%20is%20why%20i'm%20a%20bit%20late%20with%20Meatless%20Monday,%20oh%20that%20and%20the%20fact%20that%20this%20was%20tonights%20dinner%20:-)%3C/p%3E%3Cp%3EOk%20so%20back%20to%20the%20ravioli!%20These%20are%20so%20delicious%20and%20a%20bit%20of%20a%20cheat!%20Nope,%20didn't%20whip%20out%20the%20Kitchenaid%20with%20pasta%20attachment....%20wonton%20wrappers%20baby!%20This%20may%20look%20fancy%20but%20its%20really%20simple!%20A%20little%20bit%20of%20chopped%20up%20saut%C3%A9ed%20spinach,%20ricotta,%20an%20egg%20and%20a%20simple%20sauce%20made%20from%20San%20Marzano%20tomatoes.%20San%20Marzano%20tomatoes%20are%20not%20something%20I%20buy%20often,%20they%20are%20a%20bit%20more%20expensive%20then%20regular%20canned%20tomatoes.%20I%20figured%20since%20I%20was%20making%20a%20small%20pot%20of%20sauce%20and%20it%20would%20only%20be%20cooking%20for%20a%20little%20while%20I%20wanted%20to%20give%20these%20a%20try.%20They%20really%20are%20amazing!%20Sweeter%20and%20less%20acidic...%20really%20good%20tomatoes!%3C/p%3E%3Cp%3EThis%20is%20a%20very%20basic%20and%20simple%20sauce.%20In%20a%20pot,%20over%20medium%20heat,%20add%20a%20few%20drizzles%20of%20olive%20oil%20and%20the%20%20garlic%20cloves.%20Once%20lightly%20golden%20go%20ahead%20and%20add%20in%20the%20tomatoes%20and%20basil.%20Using%20an%20immersion%20blender%20puree%20the%20sauce%20to%20the%20consistency%20of%20your%20liking.%20Season%20with%20salt%20and%20pepper.%20Simmer%20for%2030%20minutes.%3C/p%3E%3Cp%3EIn%20a%20small%20saut%C3%A9%20pan,%20over%20medium%20low%20heat,%20add%20a%20drizzle%20of%20olive%20oil,%20the%20spinach%20and%20garlic%20seasoning.%20Cook%20until%20just%20wilted.%20Remove%20from%20pan%20and%20give%20it%20a%20good%20chop.%3C/p%3E%3Cp%3EIn%20a%20bowl%20mix%20together%20the%20egg,%20ricotta,%20chopped%20spinach%20and%20a%20little%20pepper.%3C/p%3E%3Cp%3ELay%20out%201/2%20the%20wonton%20wrappers%20and%20place%20about%20a%20tsp%20of%20the%20filling%20in%20the%20center.%3C/p%3E%3Cp%3ENow%20to%20seal%20them,%20get%20a%20little%20bowl%20of%20water,%20using%20your%20finger%20wet%20all%20four%20edges%20of%20the%20wonton.%20Place%20another%20wonton%20wrapper%20oven%20top%20pressing%20the%20edges%20together%20well.%20Pop%20them%20in%20a%20single%20layer%20onto%20a%20flour%20dusted%20lined%20baking%20sheet.%20Refrigerate%20until%20you%20are%20ready%20to%20cook%20them.%3C/p%3E%3Cp%3EThese%20cook%20up%20super%20fast,%20they%20will%20only%20take%203-4%20to%20cook%20in%20boiling%20water.%20Cook%20them%20in%20small%20batches%20because%20they%20will%20stick%20to%20each%20other,%20so%20also%20stir%20them%20around%20a%20bit%20as%20they%20cook.%20Remove%20the%20ravioli,%20plate%20them%20and%20top%20with%20your%20delicious%20sauce.%3C/p%3E%3Cp%3E***Don't%20forget%20to%20enter%20the%20fabulous%20giveaway%20going%20on%20now!!!****%3C/p%3E%3Cp%3EHAPPY%20EATS!!!%3C/p%3E){kind=link}
