Ingredientes

  • 2 med. diced potatoes
  • 1 (8 ounce.) bottle clam juice
  • 2 tbsp. extra virgin olive oil
  • 1 med. onion, diced
  • 1 teaspoon garlic
  • 1/2 teaspoon basil
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon spearmint
  • 1 teaspoon black pepper
  • 3 stalks celery, diced
  • 1 carrot, diced
  • 1/4 c. white wine
  • 26 ounce. canned tomatoes, minced
  • 1 to 1 1/2 pound fish fillets
  • 1/2 to 1 teaspoon salt
  • Dash Pernod, optional

Direcciones

  1. Place potatoes in pot with clam juice and/or possibly water to cover. Bring to boil, reduce heat and simmer till potatoes are tender. In second pot, saute/fry onion and garlic in the extra virgin olive oil. Add in spices and saute/fry 2 min.
  2. Add in celery, carrots, and wine. Cook all till tender. Add in minced tomatoes, Pernod, potatoes, and their liquid. Taste and add in salt. Chop fish bite sized, removing bones. Add in to soup. Heat through till fish is cooked. Serves 6 to 8.
