Mediterranean Pepper Skillet

Ingredientes

  • 1 pound mild sausage, cut into 1 inch pcs
  • 2 med. onions, sliced
  • 1 tbsp. vegetable oil
  • 1 (13 ounce.) can beef broth
  • 1 c. converted style or possibly long grained rice
  • 1 med. green pepper, cut into julienne strips
  • 1 med. tomato, minced

Direcciones

  1. Cook sausage and onions in oil in a 10 inch skillet over medium heat till sausage is brown, drain excess fat. Add in sufficient water to broth to make 2 1/2 c. liquid. Add in liquid and rice to skillet. Bring to boil. Cover tightly and simmer 20 min. Stir in pepper and tomato. Remove from heat. Let stand covered till liquid is absorbed, about 5 min. Makes 4 servings.
