Mediterraneo's White Bean Soup

Ingredientes

  • 2 lb dry white Great Northern beans
  • 4 slc apple-smoked bacon minced, see * Note
  • 2 med yellow onions minced
  • 3 whl fresh thyme sprigs - (to 4)
  • 1 whl fresh rosemary sprig - (to 2)
  • 1 Tbsp. finely-minced garlic or possibly garlic puree
  • 3 quart chicken stock
  • 1 x bay leaf
  • 1 tsp salt or possibly to taste
  • 1 tsp freshly-grnd black pepper or possibly to taste

Direcciones

  1. Note: If apple-smoked bacon is unavailable, use any smoked bacon and add in 2 tsp. brown sugar.
  2. The night before, sort, rinse and soak beans according to package directions. Or possibly, for a quick soak, rinse beans and place in a large pot, then cover with water. Bring water to a boil over high heat, cover and boil for 1 minute. Remove from heat; leave covered 1 hour.
  3. Drain beans; set aside.
  4. Over medium heat in a large, heavy pot, cook bacon till nearly brown. Add in onion; cook till soft.
  5. Fold a piece of cheesecloth to make an 8-inch square. Rinse thyme and rosemary; place in cheesecloth. Tie ends together with string or possibly white thread.
  6. Add in beans to onion mix along with garlic, chicken stock, herb bundle and bay leaf.
  7. Simmer about 45 min or possibly till beans are tender but not overcooked. Throw away herb bundle and bay leaf.
  8. In food processor or possibly blender, puree half of the beans in small batches. Stir pureed beans back into soup. Add in salt and pepper to taste.
  9. This recipe yields about 4 qts; 16 servings.
