.%20I%20will%20post%20all%20of%20those%20food%20pictures%20and%20their%20recipes%20soon..........%20Oh%20Yes!%20he%20has%20made%20sure%20that%20I%20click%20pictures%20of%20everything%20that%20he%20has%20cooked%20int%20eh%20past%20few%20months.%3C/p%3E%3Cp%3EI%20cannot%20say%20this%20enough%20-%20But,%20recovery%20would%20have%20been%20tough%20had%20it%20not%20been%20for%20his%20and%20our%203%20year%20old%20kiddo's%20love%20and%20affection%20and%20constant%20care.%20Love%20them%20both%20to%20bits.%20I%20thank%20the%20Lord%20every%20second%20of%20every%20minute%20of%20every%20day%20for%20this.%3C/p%3E%3Cp%3EYesterday%20he%20joined%20his%20office%20after%20a%202%20week%20leave%20(for%20my%20recovery).%20He%20was%20working%20from%20home%20and%20hence%20he%20shut%20his%20laptop%20at%20around%205:30%20PM%20and%20came%20to%20the%20living%20room%20where%20kiddo%20and%20I%20were%20playing%20-%20He%20said%20he%20was%20tired%20of%20eating%20the%20frozen%20(home%20cooked)%20food%20and%20wanted%20to%20cook%20something%20for%20dinner.%20Well,%20we%20did%20not%20have%20a%20lot%20of%20groceries,%20as%20we%20were%20not%20making%20food%20everyday.%20Found%20some%20fish%20fillets%20in%20the%20freezer%20-%20onions,%20tomatoes,%20garlic%20and%20ginger%20is%20always%20available%20in%20the%20house%20-%20and%20spices.........%20well,%20every%20Indian%20house%20has%20a%20lot%20of%20spices%20always%20readily%20available.%3C/p%3E%3Cp%3ESo,%20we%20set%20out%20to%20make%20a%20quick%20fish%20curry%20that%20could%20be%20eaten%20with%20steamed%20rice%20and%20that%20could%20be%20cooked%20with%20minimal%20effort.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E2%20pounds%20fish%20-%20I%20used%20boneless%20and%20skinless%20swai%20fillets%20-%20you%20can%20use%20Tilapia,%20Catfish%20or%20any%20other%20fish%20of%20your%20choice.%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EA%20clay%20pot%20is%20generally%20used%20to%20make%20kerala%20fish%20curries%20-%20Well,%20I%20have%20a%20stoneware%20pot%20and%20I%20used%20that%20-%20you%20can%20even%20use%20a%20non-stick%20saucepan%20or%20a%20karahi%20to%20make%20this%20curry.%3C/p%3E%3Cp%3EIn%20the%20vessel%20of%20your%20choice,%20add%20the%20coconut%20oil,%20when%20it%20gets%20hot,%20add%20the%20mustard%20seeds%20and%20let%20them%20splutter.%20Add%20the%20fenugreek%20seeds%20add%20the%20curry%20leaves%20and%20fry%20for%20a%20few%20seconds.%20Add%20the%20chopped%20onions%20and%20fry%20till%20they%20turn%20a%20nice%20pink%20color.%20To%20this%20add%20the%20tomatoes,%20ginger%20and%20garlic%20and%20mix%20well.%20Cook%20till%20the%20tomatoes%20are%20softened%20and%20the%20oil%20leaves%20the%20side%20of%20the%20vessel.%20Now%20add%20the%20turmeric%20powder,%20chili%20powder,%20coriander%20powder,%20fenugreek%20powder,%20tamarind%20paste%20and%20asafoetida%20and%20mix%20well.%20Keep%20stirring%20for%20about%202%20minutes%20till%20the%20masala%20powders%20are%20well%20integrated%20and%20the%20mixtures%20get%20a%20nice%20red%20hue.%20Now%20add%202%20cups%20of%20hot%20water%20(you%20can%20add%20more%20if%20you%20want%20the%20curry%20to%20be%20a%20little%20less%20thick).%20Add%20salt%20to%20taste.%20Cover%20and%20let%20this%20mixture%20come%20to%20a%20boil.%20Once%20it%20starts%20to%20boil,%20bring%20the%20heat%20to%20medium%20low%20and%20add%20the%20fish%20pieces%20one%20by%20one.%20Be%20careful%20not%20to%20stir%20this%20mixture%20a%20lot,%20or%20the%20fish%20will%20break.%20Simmer%20for%20about%2020%20minute%20on%20medium%20low%20flame.%20Check%20if%20the%20fish%20is%20cooked,%20else%20simmer%20for%20another%2010%20minutes.%20Shut%20the%20heat,%20cover%20the%20vessel%20and%20let%20this%20curry%20sit%20for%20about%20an%20hour%20(you%20can%20actually%20make%20it%20a%20day%20in%20advance%20and%20let%20it%20sit%20for%20the%20flavors%20to%20get%20mulled%20together).%20Garnish%20with%20chopped%20cilantro%20and%20serve%20with%20steaming%20white%20rice.%3C/p%3E){kind=link}
