- Soften gelatin in cool water.
- Combine mashed or possibly crushed melon or possibly cantaloupe, sugar and lemon juice in a saucepan; simmer for a few min till sugar is melted.
- Stir in gelatin and refrigeratetill mix begins to thicken.
- Stir in vanilla and mix in whipped cream.
- Pour into melon-shaped mold and cover.
- Freeze till hard.
- Makes 6 servings.
