Ingredientes

  • 15 ounce corn, frzn thawed
  • 15 ounce black beans liquid removed and rinsed
  • 15 ounce canned tomatoes minced w/ liquid
  • 4 ounce green chiles minced
  • 1/2 c. onion finely minced
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1 Tbsp. jalapeno chopped, optional
  • 8 ounce lowfat monterey jack cheese grated
  • 8 x 9 inch lowfat wholewheat tortillas

Direcciones

  1. Mix corn, beans, tomatoes, chilies, onions and spices in a bowl. If time permits, allow flavors to blend. Lightly spray two 9-inch cake pans with oil. Put a tortilla in each pan and spoon over 1/6 of vegetable mix.
  2. Sprinkle on about 2 ounce. grated cheese. Repeat twice more, and top with remaining tortillas. Bake in 400-degree oven about 15 min. Let cold 3-5 min and invert onto plates. Cut in wedges to serve.
