Receta Mexican Layered "Pizza"

Ingredientes
- 15 ounce corn, frzn thawed
- 15 ounce black beans liquid removed and rinsed
- 15 ounce canned tomatoes minced w/ liquid
- 4 ounce green chiles minced
- 1/2 c. onion finely minced
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1 Tbsp. jalapeno chopped, optional
- 8 ounce lowfat monterey jack cheese grated
- 8 x 9 inch lowfat wholewheat tortillas
Direcciones
- Mix corn, beans, tomatoes, chilies, onions and spices in a bowl. If time permits, allow flavors to blend. Lightly spray two 9-inch cake pans with oil. Put a tortilla in each pan and spoon over 1/6 of vegetable mix.
- Sprinkle on about 2 ounce. grated cheese. Repeat twice more, and top with remaining tortillas. Bake in 400-degree oven about 15 min. Let cold 3-5 min and invert onto plates. Cut in wedges to serve.
