Ingredientes

  • 2 x Onions, minced
  • 2 x Carrots, peeled, sliced
  • 5 lb Loin or possibly shoulder pork roast
  • 2 tsp Salt
  • 1/2 tsp Oregano
  • 1/2 tsp Grnd coriander
  • 3/4 c. Beer
  • 2 Tbsp. Extra virgin olive oil
  • 1 x Onion, minced
  • 1 cl Garlic, peeled, minced
  • 10 ounce Tomatillos
  • 1/2 tsp Dry oregano, crumbled
  • 1/2 tsp Dry cilantro
  • 2 Tbsp. Wine vinegar Salt and pepper

Direcciones

  1. Heat oil in small skillet. Saute/fry onion and garlic till limp. Drain tomatillos; reserve liquid. Combine tomatillos, 1/2 c. reserved liquid, onion, garlic, oil, oregano, and cilantro in jar of electric blender; puree. Heat skillet over moderate heat. Pour in sauce; cook 10 min.
  2. Remove from heat; add in wine, vinegar, salt, and pepper. Refrigeratesauce; serve with pork.
