%20I%20also%20realise%20that%20I've%20been%20using%20this%20base%20recipe%20for%20a%20couple%20of%20years%20now%20and%20never%20blogged%20it!%3C/p%3E%3Cp%3EThis%20dough%20makes%20rolls,%20loaves%20and%20is%20very%20flexible%20as%20can%20use%20fresh%20or%20dried%20yeast,%20plus%20a%20variety%20of%20things%20liked%20dried%20herbs%20or%20even%20sweeter%20with%20a%20few%20rum%20soaked%20raisins%20and%20cinnamon!%20Flavoured%20oils%20are%20also%20good,%20I%20like%20to%20make%20rosemary%20infused%20oil%20specially%20for%20breads.%20Depending%20on%20the%20time%20of%20year%20it%20seems%20and%20flour%20ratio%20you%20may%20need%20a%20little%20more%20or%20a%20little%20less%20liquid.%3C/p%3E%3Cp%3EOverall%20I%20like%20to%20mix%2070/%2030%20mix%20of%20organic%20stoneground%20wholemeal%20and%20strong%20white%20bread%20flour%20for%20most%20of%20my%20bread%20but%20today%20just%20used%20strong%20white%20bread%20flour%20and%20made%20some%20poppyseed%20rolls,%20along%20with%20a%20few%20experimental%20ones%20filled%20with%20a%20half%20a%20bockwurst%20sausage%20(like%20frankfurters!)%20which%20were%20really%20good!%3C/p%3E%3Cp%3EWhen%20I%20was%20in%20Amsterdam%20last%20year%20I%20had%20something%20similar%20and%20had%20been%20meaning%20to%20make%20ever%20since,%20were%20very%20tasty%20warm%20from%20the%20oven!%3C/p%3E%3Cp%3EAmsterdam%20Bread%20-%3C/p%3E%3Cp%3ETodays%20mix%20was:%3C/p%3E%3Cp%3EPlace%20the%20yeast,%20sugar,%201%20tbsp%20flour%20and%201/2%20the%20water%20in%20a%20bowl,%20mix%20well%20and%20leave%20to%20settle%20for%20about%205%20minutes.%3C/p%3E%3Cp%3ESift%20the%20flour,%20add%20the%20salt%20and%20mix%20in,%20make%20a%20well%20in%20the%20middle.%20Add%20the%20remaining%20water%20and%20oil%20to%20the%20yeast%20mix,%20stir%20into%20the%20dry%20ingredients%20until%20you%20have%20a%20dough,%20tip%20onto%20a%20well%20floured%20surface%20and%20knead%20for%205-10%20minutes%20until%20soft%20and%20smooth,%20place%20in%20a%20covered%20bowl%20and%20allow%20to%20rest%20in%20a%20warm%20place%20for%2045%20minutes%20or%20until%20doubled.%3C/p%3E%3Cp%3ETip%20out%20onto%20a%20lightly%20floured%20surface,%20knock%20the%20air%20out%20and%20shape%20as%20desired!%20Either%20milk%20or%20egg%20wash,%20you%20can%20sprinkle%20with%20herbs,%20cheese%20etc%20at%20this%20stage.%20Allow%20to%20rest%20for%20a%20further%2020%20minutes%20or%20so.%20Heat%20the%20oven%20to%20180o%20fan/%20200o.%20Small%20rolls%20will%20take%20about%2012-15%20minutes,%20turn%20upside%20down%20and%20tap%20-%20if%20hollow%20sounding%20then%20will%20be%20cooked.%20Allow%20a%20little%20longer%20for%20larger%20shapes.%20Can%20really%20recommend%20using%20baking%20parchment%20to%20line%20your%20tins%20as%20no%20sticking!%3C/p%3E%3Cp%3EThese%20are%20previous%20ones%20using%20the%20base%20recipe:%3C/p%3E%3Cp%3ELeft:%20Italian%20herb%20-%20right:%20Sultana%20and%20rum%3C/p%3E%3Cp%3ESeeded%20bun%20loaf%20and%20mini%20rolls%3C/p%3E%3Cp%3EPoppyseed%20topped%20with%20rosemary%20oil%20and%20herbs%20round%20loaf:%3C/p%3E){kind=link}
