Ingredientes

  • 6 ounce frzn minced
  •     spinach, thawed and liquid removed
  • 1 c. ricotta cheese
  • 2 Tbsp. lowfat sour cream
  • 1/2 c. grated Parmesan cheese
  • 1/2 c. shredded Cheddar cheese
  • 4 x Large eggs
  • 1/4 c. lowfat milk
  • 1/4 tsp warm pepper sauce
  • 1 tsp grnd cumin
  • 1/4 tsp grnd black pepper
  • 1/2 tsp lemon pepper
  • 2 Tbsp. dry parsley
  • 3 Tbsp. salsa

Direcciones

  1. Preheat oven to oven to 375 degrees F (190 degrees C).
  2. Lightly grease one 12-c. muffin tin.
  3. In a medium bowl, combine spinach, ricotta cheese, lowfat sour cream, Parmesan cheese, and Cheddar cheese.
  4. In a small mixing bowl, beat Large eggs, lowfat milk, warm sauce, cumin, black pepper, parsley, and lemon pepper. Stir egg mix into spinach mix.
  5. Spoon mix into the prepared muffin tin. Bake in preheated oven for 20 to 25 min. Let stand for 5 min.
  6. Remove from muffin c.. Serve hot.
  7. Muffin-sized perky spinach frittatas. They are fun to make and even the kids love them! Accompany this dish with tortilla chips and salsa - makes for a great treat! Use egg substitute in place of the Large eggs to make this an even healthier treat.
