Ingredientes
- 6 ounce frzn minced
- Â Â spinach, thawed and liquid removed
- 1 c. ricotta cheese
- 2 Tbsp. lowfat sour cream
- 1/2 c. grated Parmesan cheese
- 1/2 c. shredded Cheddar cheese
- 4 x Large eggs
- 1/4 c. lowfat milk
- 1/4 tsp warm pepper sauce
- 1 tsp grnd cumin
- 1/4 tsp grnd black pepper
- 1/2 tsp lemon pepper
- 2 Tbsp. dry parsley
- 3 Tbsp. salsa
Direcciones
- 1. Preheat oven to oven to 375 degrees F (190 degrees C).
- Lightly grease one 12-c. muffin tin.
- 2. In a medium bowl, combine spinach, ricotta cheese, lowfat sour cream, Parmesan cheese, and Cheddar cheese.
- 3. In a small mixing bowl, beat Large eggs, lowfat milk, warm sauce, cumin, black pepper, parsley, and lemon pepper. Stir egg mix into spinach mix.
- 4. Spoon mix into the prepared muffin tin. Bake in preheated oven for 20 to 25 min. Let stand for 5 min.
- Remove from muffin c.. Serve hot.
- Muffin-sized perky spinach frittatas. They are fun to make and even the kids love them! Accompany this dish with tortilla chips and salsa - makes for a great treat! Use egg substitute in place of the Large eggs to make this an even healthier treat.
