Receta Mini Quiche and Coffee Cake Muffins

Ingredientes

  • 3/4 cup diced cooked bacon
  • 1/2 cup shredded pepper jack cheese
  • 3 eggs, beaten
  • 1 cup milk
  • 1/4 cup Country Crock, melted
  • 1/2 cup biscuit/baking mix
  • 1/4 t ground mustard
  • 2 T grated Parmesan cheese
  • In a small bowl
  • Combine the bacon and pepper jack cheese
  • Divide among 12-18 well greased mini muffin cups
  • In a four cup glass measuring cup with spout
  • Combine the remaining ingredients just until blended
  • Slowly pour over bacon and cheese mixture
  • Bake at 375 for 20-25 minutes or
  • Until a toothpick inserted near the center comes out clean.
  • Let stand 5 minutes before removing from pan
  • Serve~

  • 1/3 cup Country Crock, softened
  • 1/4 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1 pkg. (3.4 oz) instant vanilla pudding mix
  • 1 T baking powder
  • 1/4 t salt
  • 1 1/4 cups milk
  • 1/2 cup mini chocolate chips
  • Topping
  • 1/2 cup coconut
  • 1/3 cup packed brown sugar
  • 2 T Country Crock, melted
  • 1/4 t ground cinnamon
  • Line 12-18 mini muffin cups
  • with paper liners
  • In a medium mixing bowl
  • Cream butter and sugar
  • Beat in egg
  • Combine flour, pudding mix, baking powder and salt
  • Add to creamed mixture alternately with milk
  • Beat until well blended
  • Stir in mini chocolate chips
  • Fill paper-lined mini muffin cups two-thirds full
  • Combine topping ingredients
  • Sprinkle over batter
