Receta Mini Quiche and Coffee Cake Muffins
Ingredientes
- 3/4 cup diced cooked bacon
- 1/2 cup shredded pepper jack cheese
- 3 eggs, beaten
- 1 cup milk
- 1/4 cup Country Crock, melted
- 1/2 cup biscuit/baking mix
- 1/4 t ground mustard
- 2 T grated Parmesan cheese
- In a small bowl
- Combine the bacon and pepper jack cheese
- Divide among 12-18 well greased mini muffin cups
- In a four cup glass measuring cup with spout
- Combine the remaining ingredients just until blended
- Slowly pour over bacon and cheese mixture
- Bake at 375 for 20-25 minutes or
- Until a toothpick inserted near the center comes out clean.
- Let stand 5 minutes before removing from pan
- Serve~

- 1/3 cup Country Crock, softened
- 1/4 cup sugar
- 1 egg
- 1 1/2 cups flour
- 1 pkg. (3.4 oz) instant vanilla pudding mix
- 1 T baking powder
- 1/4 t salt
- 1 1/4 cups milk
- 1/2 cup mini chocolate chips
- Topping
- 1/2 cup coconut
- 1/3 cup packed brown sugar
- 2 T Country Crock, melted
- 1/4 t ground cinnamon
- Line 12-18 mini muffin cups
- with paper liners
- In a medium mixing bowl
- Cream butter and sugar
- Beat in egg
- Combine flour, pudding mix, baking powder and salt
- Add to creamed mixture alternately with milk
- Beat until well blended
- Stir in mini chocolate chips
- Fill paper-lined mini muffin cups two-thirds full
- Combine topping ingredients
- Sprinkle over batter
