%20recipes%20and%20in%20the%20two%20days%20after%20school%20let%20out%20for%20winter%20break,%20we'd%20cover%20our%20whole%20dining%20room%20table%20with%20buried-cherry%20cookies,%20date%20balls,%20Mexican%20wedding%20cakes,%20creme%20de%20menthe%20bars,%20bags%20of%20caramel%20corn%20and%20crazy%20candy%20hash,%20and%20these%20little%20pecan%20tarts%20(among%20other%20treats).%20We%20arranged%20them%20on%20trays%20or%20in%20boxes%20lined%20with%20festive%20tissue%20paper%20to%20deliver%20to%20friends%20and%20neighbors%20and%20spread%20some%20holiday%20cheer.%20Sometimes%20we'd%20even%20go%20carolling%20as%20we%20dropped%20them%20off.%20I%20loved%20doing%20this.%20It%20was%20all%20very%20Norman%20Rockwell-esque.%3C/p%3E%3Cp%3EWhen%20I%20made%20these%20last%20Friday,%20I%20added%20my%20own%20twist%20to%20our%20traditional%20recipe%20by%20adding%20a%20chocolate%20ganache%20drizzle.%20Whoa!%20It%20was%20an%20excellent%20addition%20to%20an%20already%20delicious%20treat.%20Thank%20goodness%20I%20gave%20away%20all%20but%203%20of%20these%20little%20treats.%20There%20are%20only%20so%20many%20squats,%20lunges,%20and%20sit-ups%20that%20I%20can%20endure%20to%20compensate%20for%20my%20lack%20of%20self%20control!%3C/p%3E%3Cp%3ETo%20make%20the%20shell%20for%20the%20tarts,%20just%20cream%20together%20a%20stick%20of%20softened%20butter%20and%203%20oz.%20of%20cream%20cheese.%3C/p%3E%3Cp%3EAdd%20a%20cup%20of%20flour.%3C/p%3E%3Cp%3EI%20kneaded%20mine%20in%20the%20bowl%20a%20little%20until%20it%20all%20stuck%20together%20and%20I%20could%20form%20it%20into%20a%20ball.%20Then%20I%20covered%20it%20and%20moved%20it%20to%20the%20fridge%20to%20chill%20for%20a%20bit.%3C/p%3E%3Cp%3EDivide%20the%20dough%20into%2024%20pieces%20and%20shape%20into%20balls.%20Drop%20them%20into%20mini%20tart%20or%20mini%20muffin%20cups.%3C/p%3E%3Cp%3EThe%20next%20step%20is%20my%20favorite%20part!%20This%20Norpro%20Wood%20Tart%20Tamper%206%201/4%22%20makes%20this%20step%20so%20easy!%3C/p%3E%3Cp%3EDip%20the%20tamper%20into%20some%20flour%20so%20that%20the%20dough%20doesn't%20stick%20and%20then%20press%20into%20the%20center%20of%20each%20ball%20of%20dough.%3C/p%3E%3Cp%3EApplying%20slow%20and%20constant%20pressure,%20press%20down%20until%20the%20dough%20forms%20around%20the%20tamper%20and%20comes%20up%20to%20the%20top%20of%20the%20tart%20cups.%3C/p%3E%3Cp%3EAnd%20voila!%20A%20perfect%20miniature%20pie%20shell!%3C/p%3E%3Cp%3ENow%20sprinkle%20some%20finely%20chopped%20(nearly%20ground)%20pecans%20into%20the%20bottom%20of%20each%20shell.%20I've%20never%20measured,%20but%20I'd%20guess%20that%20I%20use%20around%201/2%20teaspoon.%3C/p%3E%3Cp%3ETo%20make%20the%20filling,%20combine%20brown%20sugar,%20eggs,%20very%20soft%20or%20melted%20butter,%20vanilla,%20and%20a%20pinch%20of%20salt.%3C/p%3E%3Cp%3ESpoon%20the%20filling%20into%20each%20cup,%20over%20the%20pecans.%20Leave%20a%20little%20room%20at%20the%20top%20for...%3C/p%3E%3Cp%3Emore%20pecans!%20Give%20em'%20a%20good%20sprinkling.%3C/p%3E%3Cp%3EThis%20is%20where%20my%20picture%20tutorial%20ends.%20I%20had%20pictures%20of%20these%20coming%20out%20of%20the%20oven,%20cooling,%20and%20being%20drizzled%20with%20the%20ganache.%20However,%20in%20my%20haste%20to%20make%20space%20on%20my%20camera's%20memory%20stick%20for%20my%20daughter's%20school%20Christmas%20show,%20I%20deleted%20them.%20Ooops.%20Here%20is%20what%20I%20did:%20I%20baked%20em'.%20I%20removed%20em'%20from%20the%20oven%20and%20cooled%20in%20the%20pan%20for%205%20minutes%20or%20so.%20Then%20I%20ran%20a%20butter%20knife%20around%20the%20edges%20of%20each%20tart%20to%20loosen%20em'%20up%20and%20then%20carefully%20lifted%20them%20onto%20a%20cooling%20rack.%20Finally,%20I%20drizzled%20them%20with%20a%20little%20chocolate%20ganache.%3C/p%3E%3Cp%3EAt%20least%20I%20got%20a%20picture%20of%20the%20finished%20product%20before%20I%20served%20some%20to%20the%20moms%20that%20attended%20my%20daughter's%20cookie%20decorating%20party.%20I%20also%20took%20some%20to%20my%20parenting%20group%20Christmas%20party%20the%20next%20day,%20and%20then%20I%20put%20the%20remainder%20into%20a%20pretty%20little%20tin%20and%20delivered%20them%20to%20a%20neighbor.%20Like%20I%20said,%20I%20can%20only%20do%20so%20many%20crunches%20to%20compensate...%20I%20had%20to%20get%20these%20out%20of%20my%20house!%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EMiniature%20Pecan%20Tarts%3C/p%3E%3Cp%3EFor%20the%20shells:%3C/p%3E%3Cp%3EMelt%20chocolate%20with%20whipping%20cream%20in%20a%20small%20bowl%20in%20the%20microwave%20for%2030%20seconds.%20Stir%20until%20smooth.%20If%20additional%20melting%20is%20needed,%20heat%20at%2010%20second%20intervals,%20stirring%20after%20each.%20Add%20more%20cream%20as%20needed%20to%20achieve%20desire%20drizzling%20consistency.%3C/p%3E){kind=link}
